cookbook of the Junior League of Houston.\u00c2\u00a0 I recently purchased this cookbook after eyeing it again and again at Barnes and Noble and Amazon.\u00c2\u00a0 This is another one of those cookbooks where every single recipe looks absolutely delicious.\u00c2\u00a0 I love that it&#8217;s a local cookbook, and according to the cover, it has won eight national cookbook awards.\u00c2\u00a0 This recipe in particular caught my eye because of the pesto.\u00c2\u00a0 I love eating dishes with pesto at restaurants, but it occurred to me that I&#8217;ve never actually made anything with pesto at home.\u00c2\u00a0 I took the easy way out this time and used store bought pesto, but I&#8217;m sure I&#8217;ll try to make my own sometime soon.\u00c2\u00a0 The verdict?\u00c2\u00a0 Easy to put together and decent results.\u00c2\u00a0 As I was typing up the recipe, I noticed that it says to refrigerate for 8 hours before cooking&#8230;.I totally missed that part of the recipe, but everything worked out fine, so don&#8217;t let that keep you from trying this recipe.\u00c2\u00a0 The Picky Apple and I both thought the chicken was missing that extra &#8220;zing&#8221;, and could have used some additional spices.\u00c2\u00a0 Red pepper flakes?\u00c2\u00a0 Paremesan?\u00c2\u00a0 Bread crumbs instead of crushed corn flakes, perhaps?\u00c2\u00a0 This recipe has lots of potential, and I plan to try it again with a few modifications.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/03\/pesto-stuffed-chicken-rolls.jpg\" cookbook by the Junior League of Houston<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>6 boneless, skinless chicken breasts<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/4 teaspoon freshly ground pepper<\/li>\n<li>3 ounces cream cheese, softened<\/li>\n<li>1\/4 cup pesto<\/li>\n<li>1\/2 cup minced red bell pepper<\/li>\n<li>3\/4 cup crushed corn flakes<\/li>\n<li>1\/2 teaspoon paprika<\/li>\n<li>fresh basil sprigs<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>Place each piece of chicken between two sheets of plastic wrap.\u00c2\u00a0 Flatten to a 1\/4-inch thickness using a meat mallet or rolling pin.\u00c2\u00a0 Sprinkle with salt and pepper.\u00c2\u00a0 Set aside.<\/p>\n<p>Combine cream cheese, pesto, and bell pepper, stirring with a fork until smooth.\u00c2\u00a0 Spread 2 tablespoons cheese mixture over each chicken breast.\u00c2\u00a0 Roll up lengthwise, securing with wooden picks.\u00c2\u00a0 Combine corn flakes and paprika.\u00c2\u00a0 Dredge chicken in crumb mixture.\u00c2\u00a0 Place chicken in an 11 by 7-inch baking dish coated with nonstick cooking spray.\u00c2\u00a0 Cover and refrigerate 8 hours.<\/p>\n<p>Preheat oven to 350 degrees.\u00c2\u00a0 Bring chicken to room temperature before baking.\u00c2\u00a0 Bake uncovered 35 miutes.\u00c2\u00a0 Let stand 10 minutes.\u00c2\u00a0 Remove wooden picks and slices into 1 inch rounds.\u00c2\u00a0 Garnish
