\u00c2\u00a0Almost every stir fry I&#8217;ve ever tried has had soy sauce in it. \u00c2\u00a0But not this one. \u00c2\u00a0The citrus and ginger based sauce is light and refreshing. \u00c2\u00a0This stir fry is a a bit different from what we&#8217;re used to, but we both really enjoyed it!<\/span><\/h4>\n<p><span style=\"font-weight: normal;\"><a Paleo<\/a> by Sarah Fragoso<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4 tablespoons coconut oil<\/li>\n<li>2 lbs boneless, skinless chicken thighs, cut into bite-size pieces <em>(I substituted chicken breasts)<\/em><\/li>\n<li>1\/2 cup cremini mushrooms, sliced<\/li>\n<li>1 red bell pepper, thinly sliced <em>(Mine was orange)<\/em><\/li>\n<li><em>4 green onions, diced <\/em><\/li>\n<li><em>1\/4 cup chicken broth<\/em><\/li>\n<li><em>1\/2 teaspoon fresh ginger, grated<\/em><\/li>\n<li><em>Juice from 1 medium orange<\/em><\/li>\n<li><em>1 tablespoon dried basil<\/em><\/li>\n<li><em>1\/2 jalapeno minced (<em>optional<\/em>)<\/em><\/li>\n<li><em>Black pepper to taste<\/em><\/li>\n<li><em>1 bunch kale, chopped with tough stems removed<\/em><\/li>\n<li><em>1\/4 cup sliced almonds<\/em><em> (<em>I used slivered almonds<\/em>)<\/em><\/li>\n<\/ul>\n<p>In a large skillet, heat 2 tablespoons of the coconut oil and saute the chicken for 5-7 minutes. \u00c2\u00a0To the chicken, add the sliced mushrooms, red pepper, and onions, and saute another 2 minutes. \u00c2\u00a0Add the remaining ingredients except for the kale and almonds, stir well, bring to a simmer, and cook for another 2 minutes. \u00c2\u00a0Remove all ingredients from the pan and set aside. \u00c2\u00a0In the same pan, add the remaining 2 tablespoons coconut oil and the kale. \u00c2\u00a0Saute the kale until tender, about 4 minutes. \u00c2\u00a0Serve the chicken on top of the kale, and add a sprinkle of the sliced almonds on top.<\/p>\n<div class=\"linkwithin_hook\"
