{"id":744,"date":"2009-10-14T20:45:06","date_gmt":"2009-10-15T02:45:06","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=744"},"modified":"2009-10-14T20:45:06","modified_gmt":"2009-10-15T02:45:06","slug":"butternut-squash-bisque","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/10\/14\/butternut-squash-bisque\/","title":{"rendered":"Butternut Squash Bisque"},"content":{"rendered":"<p>This one is just for me.\u00c2\u00a0 I love butternut squash, but The Picky Apple doesn&#8217;t care for it and as for The Littlest Apple&#8230;well, y<a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/10\/13\/the-pickiest-of-picky\/\">ou know he won&#8217;t touch this<\/a>.\u00c2\u00a0 This soup is a little bit labor intensive, but makes plenty and freezes well.\u00c2\u00a0 I love that it&#8217;s just a hint spicy from the chipotles.\u00c2\u00a0 When you make this soup, you MUST top it with bacon crumbles.\u00c2\u00a0 It makes the soup!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-748\" title=\"Butternut Squash Bisque\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/10\/Butternut-Squash-Bisque.jpg\" alt=\"Butternut Squash Bisque\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/10\/Butternut-Squash-Bisque.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/10\/Butternut-Squash-Bisque-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Butternut Squash Bisque<\/h4>\n<p>from <em>Better Homes and Gardens<\/em>, October 2009<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 2-3 pound butternut squash<\/li>\n<li>1\/4 cup butter<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>1 large carrot, coarsely chopped<\/li>\n<li>1 stalk celery, coarsely chopped<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>2 large Braeburn or Gala apples, peeled, cored, and chopped<\/li>\n<li>1 48 oz. box reduced-sodium chicken broth (I used homemade stock)<\/li>\n<li>1 cup apple cider or apple juice<\/li>\n<li>2 canned chipotle peppers in adobo sauce, coarsely chopped<\/li>\n<li>1\/2 cup sour cream<\/li>\n<li>3 oz. smoked Gouda or smoked cheddar cheese, finely shredded<\/li>\n<li>Crumbled cooked bacon, celery leaves, and\/or shaved Gouda cheese (optional)<\/li>\n<\/ul>\n<p>Peel, seed, and cube butternut squash.\u00c2\u00a0 In 6-qt.
