\u00c2\u00a0The Picky Apple doesn&#8217;t care for goat cheese, so I got the whole batch of these to myself. \u00c2\u00a0And yes, I did eat them all. \u00c2\u00a0Pretty much in one sitting. \u00c2\u00a0I called it&#8230;&#8221;lunch.&#8221; \u00c2\u00a0If I had more ingredients on hand, I would absolutely make these again for New Year&#8217;s Eve (or any other excuse to eat them again.)!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/12\/Pancetta-Cups-with-Goat-Cheese-and-Pear.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7424\" title=\"Pancetta Cups with Goat Cheese and Pear\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/12\/Pancetta-Cups-with-Goat-Cheese-and-Pear.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/12\/Pancetta-Cups-with-Goat-Cheese-and-Pear.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/12\/Pancetta-Cups-with-Goat-Cheese-and-Pear-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h3>Pancetta Cups with Goat Cheese and Pear<\/h3>\n<p>recipe from <a href=\"http:\/\/www.thegalleygourmet.net\/2011\/10\/sunday-dinner_09.html\">The Galley Gourmet<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>16 thin slices (about 1\/2 pound) of pancetta (not paper thin)<\/li>\n<li>1 large or 2 small pears, peeled, cored and diced<\/li>\n<li>1 Tablespoon lemon juice<\/li>\n<li>4 ounces mild goat cheese<\/li>\n<li>1 Tablespoon half-and-half<\/li>\n<li>1 Tablespoon fresh thyme leaves<\/li>\n<li>Honey to drizzle<\/li>\n<\/ul>\n<p>Snuggly fit the slices of pancetta into the wells of a mini-muffin pan. \u00c2\u00a0To help keep their shape while baking, ball up a small piece of aluminum foil and place into a pancetta cup. \u00c2\u00a0Repeat with the remaining cups. \u00c2\u00a0Place the pan into a cold oven and close the door. \u00c2\u00a0Turn the oven to 400\u00c2\u00ba F and bake for 15-20 minutes or until the pancetta is browned and crisp. \u00c2\u00a0Carefully remove the cups, discarding the foil ball, and place them on a paper towel-lined rack to cool. \u00c2\u00a0The cups will continue to crisp as they cool.<\/p>\n<p>Meanwhile, toss the pears with the lemon juice in a medium bowl; set aside. \u00c2\u00a0In a separate bowl, stir together the goat cheese and half-and-half.<\/p>\n<p>Transfer the pancetta cups to a serving plate. \u00c2\u00a0FIll each cup with a spoonful of pears. \u00c2\u00a0Pipe using a piping bag or place dollops of the cheese mixture onto the pears. \u00c2\u00a0Sprinkle with the thyme leaves and drizzle with honey. \u00c2\u00a0Serve immediately. \u00c2\u00a0Enjoy!<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2011\/12\/30\/pancetta-cups-with-goat-cheese-and-pear\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>I&#8217;ll have one more &#8220;Best Of 2011&#8243; post for you tomorrow, but these little morsels of deliciousness were too amazing not to share today. \u00c2\u00a0If you&#8217;re still trying to figure out a an easy, fun appetizer to serve for New Year&#8217;s Eve, here you go!
