{"id":74,"date":"2008-03-05T11:03:46","date_gmt":"2008-03-05T17:03:46","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/2008\/03\/05\/darn-good-pasta\/"},"modified":"2008-03-05T11:20:52","modified_gmt":"2008-03-05T17:20:52","slug":"darn-good-pasta","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/03\/05\/darn-good-pasta\/","title":{"rendered":"Darn Good Pasta"},"content":{"rendered":"<p>I&#8217;ve been doing lots of cooking and baking and not so much blogging lately&#8230;.I&#8217;ve been feeling under the weather with a sinus infection, and The Littlest Apple is back to waking up 5 or 6 times a night, which is just dandy.\u00c2\u00a0 So I&#8217;m doing my best to get caught up during his naptime today.\u00c2\u00a0 Ahhhh, naptime&#8230;.I still can&#8217;t believe we finally got The Littlest Apple to actually take a nap during the day.\u00c2\u00a0 We&#8217;ve come a long way.\u00c2\u00a0 Anyway, I&#8217;ve got quite a few new recipes to share with you, so stay tuned!<\/p>\n<p>After making those <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/21\/sun-dried-tomato-chicken-roll-ups\/\">Sun-dried Tomato Chicken Roll-ups<\/a>, I had some leftover penne and sun-dried tomatoes.\u00c2\u00a0 In an attempt to cut back my ever-increasing grocery bill (all that baking adds up!), I &#8220;shopped&#8221; at home first, and found a recipe in Taste of Home that I could make with ingredients already on hand.\u00c2\u00a0 It was easy to put together and not too rich.\u00c2\u00a0 I would use homemade alfredo sauce (as opposed to the stuff in the jar) if I made this again.\u00c2\u00a0 The Picky Apple didn&#8217;t care for this dish because of the wine sauce.\u00c2\u00a0 You would think I&#8217;d have learned my lesson after serving him the <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/27\/mediterranean-chicken-fettuccine\/\">Mediterranean Chicken Fettuccine<\/a> with red wine sauce, but this dish used <em>white<\/em> whine, and much less of it.\u00c2\u00a0 Thought I could sneak it by him, but apparently not. \u00c2\u00a0\u00c2\u00a0 Those of you that love alfredo sauce and wine sauces will like this dish.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/03\/darn-good-pasta.jpg\" title=\"darn-good-pasta.jpg\"><img decoding=\"async\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/03\/darn-good-pasta.jpg\" alt=\"darn-good-pasta.jpg\" \/><\/a><\/p>\n<h4><strong>Darn Good Pasta<\/strong><\/h4>\n<p>from Taste of Home Brand Name Cookbook, Spring 2008<\/p>\n<p>Yields 4 servings\u00c2\u00a0 (probably more like 6!)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>8 ounces uncooked penne or bow tie pasta<\/li>\n<li>2 shallots, chopped<\/li>\n<li>1 garlic clove, minced<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>3\/4 pound boneless skinless chicken breast, cut into bite-size pieces<\/li>\n<li>1\/4 Pinot Grigio<\/li>\n<li>1\/4 cup chopped fresh basil leaves<\/li>\n<li>1 tablespoon dried parsley flakes<\/li>\n<li>1 jar (about 10 ounces) alfredo sauce<\/li>\n<li>3\/4 cup sliced sun-dried tomatoes in olive oil, drained<\/li>\n<li>1\/3 cup milk<\/li>\n<li>1\/2 cup grated Parmesean cheese, divided<\/li>\n<li>1\/4 teaspoon pepper<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>Cook pasta according to package directions; drain.\u00c2\u00a0 Meanwhile, in a large skillet over medium heat, cook shallots and garlic in olive oil for about 30 seconds.\u00c2\u00a0 Add chicken and cook for 3 minutes until no longer pink.\u00c2\u00a0 Add wine, basil and parsley;
