{"id":7,"date":"2008-01-18T12:05:05","date_gmt":"2008-01-18T18:05:05","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=7"},"modified":"2008-01-18T12:06:52","modified_gmt":"2008-01-18T18:06:52","slug":"four-cheese-chicken-fettuccine","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/01\/18\/four-cheese-chicken-fettuccine\/","title":{"rendered":"Four Cheese Chicken Fettuccine"},"content":{"rendered":"<p>This has just been one of those weeks.\u00c2\u00a0 It is cold and rainy outside and I&#8217;m not getting any sleep (the Littlest Apple is waking up at LEAST every 2 hours at night, and not napping during the day), so I really wanted some comfort food.\u00c2\u00a0 Something not too time consuming to make.\u00c2\u00a0 Something cheesy.\u00c2\u00a0 Something noodle-y.\u00c2\u00a0 And I already had chopped chicken on hand, leftover from the enchiladas I made last week.\u00c2\u00a0 I&#8217;ve cooked this Four Cheese Chicken Fettuccine recipe several times before, and it was one of the dishes I put in my freezer for after Littlest Apple was born.\u00c2\u00a0 I got the recipe from one of the Yahoo Groups I belong to.\u00c2\u00a0 Supposedly it is from <em>Light and Tasty<\/em> magazine.\u00c2\u00a0 There&#8217;s absolutely nothing <em>light<\/em> about it (heavy cream, butter, four types of cheese, hello!?), but it is certainly <em>tasty<\/em>.\u00c2\u00a0\u00c2\u00a0 I&#8217;m normally not a big fan of casseroles made with &#8220;cream of _____&#8221; soups, but this one is delicious.\u00c2\u00a0 Tastes great leftover too!<\/p>\n<h4>\u00c2\u00a0Four Cheese Chicken Fettuccine<\/h4>\n<ul>\n<li>8 oz uncooked fettuccine<\/li>\n<li>1 can (10 3\/4 oz) condensed cream of mushroom soup<\/li>\n<li>1 package (8 oz) cream cheese, cubed<\/li>\n<li>1 jar (4 1\/2 oz) sliced mushrooms, drained<\/li>\n<li>1 cup heavy whipping cream<\/li>\n<li>1\/2 cup butter<\/li>\n<li>1\/4 teaspoon garlic powder<\/li>\n<li>3\/4 cup grated Parmesan cheese<\/li>\n<li>1\/2 cup shredded Mozzarella cheese<\/li>\n<li>1\/2 cup shredded Swiss cheese<\/li>\n<li>2 1\/2 cups cubed cooked chicken<\/li>\n<\/ul>\n<p>Topping:<\/p>\n<ul>\n<li>1\/3 cup seasoned bread crumbs<\/li>\n<li>2 tablespoons butter, melted<\/li>\n<li>1 to 2 tablespoons grated Parmesan cheese<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Cook fettuccine according to package directions.<\/li>\n<li>Meanwhile, in a Dutch oven or large kettle, combine the soup, cream cheese, mushrooms, cream, butter, and garlic powder.\u00c2\u00a0 Cook and stir over medium heat until blended.<\/li>\n<li>Reduce heat to low; add cheeses and stir until melted.<\/li>\n<li>Add chicken; heat through.<\/li>\n<li>Drain fettuccine; add to the chicken mixture.<\/li>\n<li>Transfer to a greased shallow 2 1\/2 qt. baking dish.<\/li>\n<li>Combine topping ingredients; sprinkle over chicken mixture.<\/li>\n<li>Cover and bake at 350\u00c2\u00b0 for 30 minutes.\u00c2\u00a0 Uncover, bake 5-10 minutes longer or until golden brown.<\/li>\n<\/ol>\n<p>Yields 8 servings.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2008\/01\/18\/four-cheese-chicken-fettuccine\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>This has just been one of those weeks.\u00c2\u00a0 It is cold and rainy outside and I&#8217;m not getting any sleep (the Littlest Apple is waking up at LEAST every 2 hours at night, and not napping during the day), so I really wanted some comfort food.\u00c2\u00a0 Something not too time consuming to make.\u00c2\u00a0 Something cheesy.\u00c2\u00a0 [&hellip;]<\/p>\n","protected":false},"author":2,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[6,5],"tags":[],"class_list":["post-7","post","type-post","status-publish","format-standard","hentry","category-chicken","category-main-dish"],"_links":{"self":[{"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/posts\/7","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/comments?post=7"}],"version-history":[{"count":0,"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/posts\/7\/revisions"}],"wp:attachment":[{"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/media?parent=7"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/categories?post=7"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/www.thepickyapple.com\/blog\/wp-json\/wp\/v2\/tags?post=7"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
