\u00c2\u00a0It made a perfect side dish for Thanksgiving since it&#8217;s full of fall flavors-butternut squash, apples, cranberries! \u00c2\u00a0It&#8217;s fresh and light, and makes a great companion to all of those other heavy Thanksgiving dishes.<\/p>\n<p>Sorry I don&#8217;t have a better photo of this&#8230;I&#8217;m notoriously bad at forgetting to take pics of my Thanksgiving food!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/11\/Autumn-Salad.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6982\" title=\"Autumn Salad\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/11\/Autumn-Salad.jpg\" alt=\"\" width=\"557\" height=\"554\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/11\/Autumn-Salad.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/11\/Autumn-Salad-150x150.jpg 150w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/11\/Autumn-Salad-300x298.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h3>Fall Salad with Butternut Squash and Apples<\/h3>\n<p>inspired by <a href=\"http:\/\/www.healthyfoodforliving.com\/?p=28531&amp;utm_source=rss&amp;utm_medium=rss&amp;utm_campaign=monday-musings-roasted-brussels-sprouts-with-apples-and-bacon\">Healthy Food for Living<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 butternut squash, peeled, seeded and chopped into 1 inch cubes<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>2 tablespoons maple syrup<\/li>\n<li>salt<\/li>\n<li>pepper<\/li>\n<li>4-5 cups baby spinach<\/li>\n<li>1 chopped apple <em>(I used Pink Lady)<\/em><\/li>\n<li>1\/2 cup dried cranberries<\/li>\n<li>2 ounces crumbled goat cheese<\/li>\n<li>1\/3 cup toasted pecans<\/li>\n<li>Apple Butter Vinaigrette, recipe below<\/li>\n<\/ul>\n<p>Toss butternut squash with olive oil, maple syrup, salt and pepper. \u00c2\u00a0Bake at 400 degrees F for 25 minutes. \u00c2\u00a0Allow squash to cool slightly, then toss in a large bowl with spinach, apple, cranberries, goat cheese, pecans and Apple Butter Vinaigrette.<\/p>\n<h3>Apple Butter Vinaigrette<\/h3>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/4 cup olive oil<\/li>\n<li>1 tablespoon apple cider vinegar<\/li>\n<li>2 tablespoons apple butter <em>(This would also be delicious with pumpkin butter)<\/em><\/li>\n<li>kosher salt and\u00c2\u00a0pepper, to taste<\/li>\n<\/ul>\n<p>Whisk together all ingredients.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2011\/11\/26\/fall-salad-with-butternut-squash-and-apple-butter-vinaigrette\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>I brought several new dishes to Thanksgiving this year, including this fabulous salad. \u00c2\u00a0I got the idea for this salad from Healthy Food For Living, and I&#8217;ve included my own modifications (and specific measurements) below. \u00c2\u00a0My parents and I loved this salad!
