{"id":6396,"date":"2011-05-11T20:06:15","date_gmt":"2011-05-12T02:06:15","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=6396"},"modified":"2011-05-11T20:06:15","modified_gmt":"2011-05-12T02:06:15","slug":"spinach-and-pear-salad-with-rosemary-vinaigrette","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2011\/05\/11\/spinach-and-pear-salad-with-rosemary-vinaigrette\/","title":{"rendered":"Spinach and Pear Salad With Rosemary Vinaigrette"},"content":{"rendered":"<p>This is one of my favorite salads!\u00c2\u00a0 The recipe reads as a laundry list of my favorite ingredients: rosemary (LOVE the rosemary vinaigrette!), toasted pecans, goat cheese and spinach.\u00c2\u00a0 I usually only prepare this about once a year because The Picky Apple doesn&#8217;t like it, but maybe I&#8217;ll start prepping a big batch of it with some grilled chicken for my lunches during the week.\u00c2\u00a0 Delicious!\u00c2\u00a0 (As you can see, I got a little carried away with the goat cheese&#8230;.love it!)<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/05\/Spinach-and-Pear-Salad-With-Rosemary-Vinaigrette.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6398\" title=\"Spinach and Pear Salad With Rosemary Vinaigrette\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/05\/Spinach-and-Pear-Salad-With-Rosemary-Vinaigrette.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/05\/Spinach-and-Pear-Salad-With-Rosemary-Vinaigrette.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/05\/Spinach-and-Pear-Salad-With-Rosemary-Vinaigrette-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Spinach and Pear Salad With Rosemary Vinaigrette<\/h4>\n<p>adapted from <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Spinach-and-Pear-Salad-with-Rosemary-Vinaigrette-107627\">Epicurious<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 tablespoons red wine vinegar<\/li>\n<li>2 tablespoons rice vinegar<\/li>\n<li>2 tablespoons vegetable broth<\/li>\n<li>1 1\/2 tablespoons minced shallots<\/li>\n<li>1 tablespoon chopped fresh parsley<\/li>\n<li>1 1\/2 teaspoons chopped fresh rosemary<\/li>\n<li>4 cups (packed) fresh baby spinach leaves <em>(This time I substituted romaine lettuce from my produce box, but I prefer to use spinach)<\/em><\/li>\n<li>4 teaspoons coarsely chopped toasted pecans<\/li>\n<li>2 ripe pears, unpeeled, cored, thinly sliced<\/li>\n<li>1\/4 cup crumbled goat cheese<\/li>\n<\/ul>\n<p>Process first 5 ingredients in blender until smooth.  Pour into small bowl. Mix in herbs. Season dressing to taste with salt  and pepper.<\/p>\n<p>Toss spinach and pecans in large bowl with enough  dressing to coat. Divide among 4 plates.
