binder, organized by Chicken, Beef, Dessert, Breakfast, and Other.\u00c2\u00a0 The categories probably need a little more refining, but that worked at the time I made my binder about 4 years ago.\u00c2\u00a0 My Recipes to Try binder is getting way too full as I keep adding, adding, adding, and not making very many of the recipes, relying instead on the internet, Food Network, or old standbys.\u00c2\u00a0 This week when doing my menu planning, I made a conscious effort to select a few recipes from the binder.\u00c2\u00a0 This Mediterranean Chicken Fettuccine from Taste of Home sounded good, and the addition of olives and feta at the end was especially appealing to me.\u00c2\u00a0 It smelled wonderful while it was cooking, as dishes with garlic and wine typically do.\u00c2\u00a0 My husband, ever The Picky Apple, opted not to add the feta and olives to his, and he isn&#8217;t really big on dishes with wine.\u00c2\u00a0 But he ate it, liked it, and seemed willing enough to eat it again in the future (but probably wouldn&#8217;t request it).\u00c2\u00a0 I liked it enough to move this recipe to my Keepers file and share it with you.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/mediterranean-chicken-fettuccine.jpg\" title=\"mediterranean-chicken-fettuccine.jpg\"><img decoding=\"async\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/mediterranean-chicken-fettuccine.jpg\" alt=\"mediterranean-chicken-fettuccine.jpg\" \/><\/a><\/p>\n<h4>Mediterranean Chicken Fettuccine<\/h4>\n<p>adapted from Taste of Home Brand Name Cookbook, Spring 2008<\/p>\n<p>Makes 6 servings.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>\u00c2\u00a06 boneless, skinless chicken breasts<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>1 cup chopped onion<\/li>\n<li>1 cup chopped celery<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>1 can (28 ounces) crushed tomatoes, undrained<\/li>\n<li>1 cup Pinot Noir<\/li>\n<li>2 teaspoons dried oregano<\/li>\n<li>2 teaspoons dried basil<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>1\/2 teaspoon pepper<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>2 bay leaves<\/li>\n<li>8 ounces fettuccine<\/li>\n<li>1 cup (4 ounces) crumbled feta cheese<\/li>\n<li>1\/4 cup sliced stuffed green olives<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>In a large nonstick skillet, brown chicken in oil.\u00c2\u00a0 Remove and keep warm.\u00c2\u00a0 In the same skillet, saute onion, celery and garlic until tender.\u00c2\u00a0 Add tomatoes, wine, oregano, basil, sugar, pepper, salt, bay leaves and chicken; bring to a boil.\u00c2\u00a0 Reduce heat; cover and simmer chicken mixture for 25-30 minutes, stirring occasionally.<\/p>\n<p>Meanwhile, cook fettuccine according to package directions.\u00c2\u00a0 Uncover chicken mixture;
