{"id":6026,"date":"2011-03-26T19:56:06","date_gmt":"2011-03-27T01:56:06","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=6026"},"modified":"2011-03-26T19:56:06","modified_gmt":"2011-03-27T01:56:06","slug":"lemon-poppyseed-waffles-with-blueberries","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2011\/03\/26\/lemon-poppyseed-waffles-with-blueberries\/","title":{"rendered":"Lemon Poppyseed Waffles with Blueberries"},"content":{"rendered":"<p>I&#8217;m on a waffle making kick!\u00c2\u00a0 Now that I&#8217;ve actually <a href=\"https:\/\/www.thepickyapple.com\/blog\/2011\/02\/23\/pumpkin-waffles\/\">started using my waffle maker<\/a>, I&#8217;ve really enjoyed experimenting with different flavors of waffles.\u00c2\u00a0 I&#8217;m still trying to find a go-to &#8220;plain&#8221; waffle recipe, but the flavored waffles are so much fun!\u00c2\u00a0 These lemon poppyseed waffles were delicious, especially topped with blueberries.\u00c2\u00a0 For this recipe, I like to use frozen blueberries because when you warm them up, they create lots of juice that is just perfect for drizzling over your waffles instead of (or in addition to) syrup.\u00c2\u00a0 Make a big batch and freeze the extras!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Lemon-Poppyseed-Waffles.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6028\" title=\"Lemon Poppyseed Waffles\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Lemon-Poppyseed-Waffles.jpg\" alt=\"\" width=\"557\" height=\"400\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Lemon-Poppyseed-Waffles.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Lemon-Poppyseed-Waffles-300x215.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Lemon Poppyseed Waffles with Blueberries<\/h4>\n<p>adapted from <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Lemon-Poppy-Seed-Waffles-with-Blueberry-Sauce-103879\">Epicurious<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 1\/2 cups all purpose flour<\/li>\n<li>6 tablespoons sugar<\/li>\n<li>2 tablespoons poppy seeds<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>3 large eggs<\/li>\n<li>1 1\/4 cups buttermilk<\/li>\n<li>1\/4 cup (1\/2 stick) unsalted butter, melted<\/li>\n<li>1 1\/2 tablespoon grated lemon peel<\/li>\n<li>2 tablespoons fresh lemon juice<\/li>\n<li>2 cups blueberries (<em>The Picky Apple Note: frozen blueberries work best here)<\/em><\/li>\n<\/ul>\n<div>Whisk first 6 ingredients in large bowl to blend.  Whisk eggs, buttermilk, melted butter, lemon juice and lemon peel in small bowl to  blend. Add buttermilk mixture all at once to flour mixture and whisk  until just blended. Let mixture stand 15 minutes.Preheat waffle iron according to manufacturer\u00e2\u20ac\u2122s  instructions. Spoon batter onto waffle iron. Cover and cook until golden  and cooked through, about 7 minutes (cooking time will vary, depending  on waffle iron). Repeat with remaining batter.
