{"id":5984,"date":"2011-03-21T20:25:11","date_gmt":"2011-03-22T02:25:11","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=5984"},"modified":"2011-03-21T20:27:43","modified_gmt":"2011-03-22T02:27:43","slug":"skillet-tamale-pie","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2011\/03\/21\/skillet-tamale-pie\/","title":{"rendered":"Skillet Tamale Pie"},"content":{"rendered":"<p>My friend &#8220;RossBoss&#8221; and I made this recipe together for our husbands last year after a day spent crafting a <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/09\/04\/happy-birthday-banner\/\">Happy Birthday Banner<\/a> (the ladies) and building <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/11\/16\/brookstone-bed-and-headboard\/\">The Littlest Apple&#8217;s bed<\/a> (the men).\u00c2\u00a0 After dinner and margaritas, we\u00c2\u00a0 played board games and just enjoyed each other&#8217;s company.\u00c2\u00a0 What a great day that was!\u00c2\u00a0 I need to make an effort to do stuff like this with my friends more often.\u00c2\u00a0 (We just hosted our Second Annual <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/06\/30\/minute-to-win-it-party\/\">Minute To Win It Party<\/a> over the weekend, so I guess that&#8217;s a start!)<\/p>\n<p>In addition to the great company that day, I LOVED this meal.\u00c2\u00a0 And I just the got recipe from my friend and made it again tonight, so I thought I&#8217;d share.\u00c2\u00a0 One skillet meals like this are so easy!\u00c2\u00a0 The crisp cornbread topping goes wonderfully with the bean, meat and chipotle filling.\u00c2\u00a0 When we first made this recipe, we dumped the whole can of chipotles in.\u00c2\u00a0 It was SPICY!\u00c2\u00a0 This time I toned it back and you know, <em>followed the instructions<\/em>, using 4 teaspoons of chipotle for a milder flavor.\u00c2\u00a0 If you like it hot, you can always add more!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tomato-Pie.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5991\" title=\"Skillet Tomato Pie\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tomato-Pie.jpg\" alt=\"\" width=\"557\" height=\"274\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tomato-Pie.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tomato-Pie-300x147.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tamale-Pie.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5992\" title=\"Skillet Tamale Pie\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tamale-Pie.jpg\" alt=\"\" width=\"557\" height=\"359\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tamale-Pie.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Skillet-Tamale-Pie-300x193.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Skillet Tamale Pie<\/h4>\n<p>from America&#8217;s Test Kitchen: 30 Minute Suppers, October 2010<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 cup frozen corn, thawed (or one can of fresh corn)<\/li>\n<li>4 teaspoons mined chipotle chiles in adobe sauce<\/li>\n<li>salt and pepper<\/li>\n<li>10 ounces store bought cornbread, crumbled (about 2 1\/2 cups) (Made my own)<\/li>\n<li>3 cups shredded Mexican cheese blend<\/li>\n<li>1 tablespoon vegetable oil<\/li>\n<li>1 onion, chopped fine<\/li>\n<li>1 1\/2 pounds 85% lean ground beef<\/li>\n<li>2 (15-ounce) cans pinto beans, drained and rinsed<\/li>\n<li>1 (28-ounce) can diced tomatoes<\/li>\n<li>1\/4 cup finely chopped fresh cilantro<\/li>\n<\/ul>\n<p>Adjust oven rack to middle position and heat oven to 450 degrees.  Pulse corn, 1 teaspoon chipotle, 1 teaspoon salt, and 1\/4 teaspoon pepper in food processor until well combined, about 6 pulses.  Transfer to bowl. Stir in cornbread and 1 1\/2 cups cheese and mix until thoroughly combined.<\/p>\n<p>Heat oil in large ovenproof skillet over medium-high heat until shimmering.  Cook onion and remaining chipotle until softened, about 4 min.  Add beef and cook until no longer pink, 3-5 minutes.  Stir in beans and tomatoes and cook until thickened, about 5 minutes.  Off the heat, stir in remaining cheese and cilantro and season with salt and pepper.<\/p>\n<p>Sprinkle cornbread mixture evenly over filling.  Transfer to the oven and bake until topping is golden brown and filling is bubbling, 10-15 minutes.
