{"id":5820,"date":"2011-03-08T07:00:26","date_gmt":"2011-03-08T13:00:26","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=5820"},"modified":"2011-03-08T07:00:26","modified_gmt":"2011-03-08T13:00:26","slug":"jambalaya","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2011\/03\/08\/jambalaya\/","title":{"rendered":"Jambalaya"},"content":{"rendered":"<p>Happy Mardi Gras!\u00c2\u00a0 Here&#8217;s a last minute recipe for dinner tonight, that ties in with Mardi Gras nicely.\u00c2\u00a0 What&#8217;s more Cajun than Jambalaya?!\u00c2\u00a0 Jambalaya is a delicious and spicy one pot meal filled with rice, tomatoes, cajun spices, andouille sausage, chicken, and sometimes shrimp (though nobody but ME eats shrimp in this house, so I left it out).<\/p>\n<p>To go with the Jambalaya, I made Oven Baked Beignets for dessert, but the beignets were a complete FAIL.\u00c2\u00a0 So disappointing, because I love beignets!\u00c2\u00a0 In the past, I&#8217;ve baked a <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/05\/mardi-gras-king-cake\/\">King Cake<\/a>.\u00c2\u00a0 Since the beignets didn&#8217;t work out, I&#8217;m going to try a different King Cake recipe today- one with cream cheese filling-\u00c2\u00a0 and if it works out, I&#8217;ll share it later!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Jambalaya.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5827\" title=\"Jambalaya\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Jambalaya.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Jambalaya.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Jambalaya-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Jambalaya<\/h4>\n<p>from <a href=\"http:\/\/www.foodnetwork.com\/recipes\/emeril-lagasse\/cajun-jambalaya-recipe2\/index.html\">Emeril Lagasse<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>8 ounces chicken, diced\u00c2\u00a0 (if you like shrimp, you could use 4 oz of chicken with 4-6 oz of shrimp)<\/li>\n<li>1 tablespoon Creole seasoning, recipe follows<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1\/4 cup chopped onion<\/li>\n<li>1\/4 cup chopped green bell pepper<\/li>\n<li>1\/4 cup chopped celery<\/li>\n<li>2 tablespoons chopped garlic<\/li>\n<li>1 can diced tomatoes<\/li>\n<li>3 bay leaves<\/li>\n<li>1 teaspoon Worcestershire sauce<\/li>\n<li>1 teaspoon hot sauce<\/li>\n<li>3\/4 cup rice<\/li>\n<li>3 cups chicken stock<\/li>\n<li>5 ounces Andouille sausage, sliced<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p>In a bowl combine shrimp, chicken and Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes,  bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add  broth. Reduce heat to medium and cook until rice absorbs liquid and  becomes tender, stirring occasionally, about 15 minutes. When rice is  just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more.
