{"id":5809,"date":"2011-03-06T21:04:41","date_gmt":"2011-03-07T03:04:41","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=5809"},"modified":"2011-03-06T21:04:41","modified_gmt":"2011-03-07T03:04:41","slug":"southwest-stuffed-bell-peppers","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2011\/03\/06\/southwest-stuffed-bell-peppers\/","title":{"rendered":"Southwest Stuffed Bell Peppers"},"content":{"rendered":"<p>This is not the first time I&#8217;ve attempted stuffed peppers, but this IS the first time I&#8217;ve actually enjoyed them!\u00c2\u00a0 I was drawn to this recipe because the filling ingredients, black beans, cheese, fire roasted tomatoes, cilantro, corn, and chipotle caught my eye.\u00c2\u00a0 Also, the ladies from <a href=\"http:\/\/www.ourbestbites.com\/\">Our Best Bites<\/a> always have great recipes.\u00c2\u00a0 This recipe is actually adapted from <a href=\"http:\/\/www.amazon.com\/Americas-Test-Kitchen-Family-Cookbook\/dp\/0936184876\">The America&#8217;s Test Kitchen Family Cookbook<\/a>, which I own, but I doubt I ever would have tried this recipe without seeing the raves about it from the Best Bites gals.\u00c2\u00a0 I&#8217;m looking forward to checking out <a href=\"&lt;a href=&quot;http:\/\/www.amazon.com\/gp\/product\/1606419315?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1606419315\">their newly released cookbook<\/a>!<\/p>\n<p>This is a great meatless meal, one that would pair nicely with a <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/07\/03\/corn-and-goat-cheese-salad-with-cilantro-honey-lime-dressing\/\">Corn and Goat Cheese Salad with Cilantro Honey Lime Dressing<\/a>.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5812\" title=\"Southwest Stuffed Peppers\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5813\" title=\"Southwest Stuffed Peppers 2\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers-2.jpg\" alt=\"\" width=\"557\" height=\"341\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers-2.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/03\/Southwest-Stuffed-Peppers-2-300x183.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Southwest Stuffed Bell Peppers<\/h4>\n<p>from <a href=\"http:\/\/www.ourbestbites.com\/2011\/01\/southwest-stuffed-bell-peppers.html\">Our Best Bites<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4 <em>very<\/em> large or 6 medium sweet peppers (red, yellow, or orange)<\/li>\n<li>1 Tbs salt<\/li>\n<li>1\/2 C white rice (or\u00c2\u00a0 brown if you want to take the time to cook it), quinoa also works<\/li>\n<li>2 Tbs olive oil<\/li>\n<li>1 onion, diced<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>1\/2 &#8211; 1 jalapeno, minced (or you could sub a small 3oz can of mild green chilies)<\/li>\n<li>1 14oz can black beans, drained and rinsed<\/li>\n<li>1 cup frozen corn kernels<\/li>\n<li>2 green onions, sliced<\/li>\n<li>1\/2-1 tsp chipotle chili powder (you can start with 1\/2 and add more to taste)<\/li>\n<li>1 tsp kosher salt, plus more to taste<\/li>\n<li>1\/4 black pepper, plus more to taste<\/li>\n<li>1 14.5 ounce can diced tomatoes, preferably fire roasted<\/li>\n<li>1 1\/4 C jack or pepperjack cheese, divided<\/li>\n<li>3-4 Tbs chopped fresh cilantro<\/li>\n<li>tortilla chips, just a handful and more for serving if desired<\/li>\n<\/ul>\n<p>Preheat oven to 350.\u00c2\u00a0 Prepare peppers by washing, slicing tops off, and  removing insides.\u00c2\u00a0 Bring 4 quarts of water to a boil and add 1  tablespoon salt.\u00c2\u00a0\u00c2\u00a0 Boil whole peppers for about 3-4 minutes, until they  begin to soften.\u00c2\u00a0 Remove from water with tongs and place on paper towels  to drain.<\/p>\n<p>Add rice to boiling water and cook until tender, about 13 minutes.\u00c2\u00a0 Drain thoroughly.<\/p>\n<p>Heat oil in a 12-inch skillet over medium-high heat.\u00c2\u00a0 Add onions,  garlic, and jalapeno (or chilies) and cook until softened, about 5  minutes.\u00c2\u00a0 Add corn, beans, green onions, chipotle chili powder, kosher  salt, and pepper.
