like&#8230;..pumpkin!\u00c2\u00a0 Am I right?\u00c2\u00a0 I know pumpkin is traditionally a fall food, but I love pumpkin year round.\u00c2\u00a0 I know pumpkin waffles are not a new concept, but these were AMAZING!\u00c2\u00a0 This was my first time making waffles (with the waffle maker we received as a wedding gift over 7 years ago), and I honestly don&#8217;t know what took me so long!\u00c2\u00a0 There is nothing like homemade waffles!\u00c2\u00a0 I served these for dinner with eggs and bacon.<\/p>\n<p>These freeze wonderfully.\u00c2\u00a0 I can tell you that with confidence because I&#8217;ve already eaten all of the extras we froze.\u00c2\u00a0 I&#8217;m planning to make another batch of these soon.\u00c2\u00a0 Really soon.<\/p>\n<p>Isn&#8217;t breakfast the greatest meal of all?\u00c2\u00a0 I was talking about breakfast foods with my husband the other day, and I realized that breakfast food is one of my favorite things (and I love having it for lunch and dinner, too).\u00c2\u00a0 I tried to come up a breakfast food that I don&#8217;t like and came up short.\u00c2\u00a0 Oatmeal, muffins, coffee cake, doughnuts, kolaches, yogurt, granola, fruit, egg casseroles, omlettes, hash browns, bacon, quiches, breakfast sausage, grits, cereal, hot cereals, pancakes, waffles, toast&#8230;.what&#8217;s not to love?\u00c2\u00a0 (Although I won&#8217;t eat eggs over easy&#8230;.no runny eggs for me!)<\/p>\n<p><strong><em>What about you?\u00c2\u00a0 Is there a breakfast food that you don&#8217;t like?<\/em><\/strong><\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/02\/Pumpkin-Waffles.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5683\" title=\"Pumpkin Waffles\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/02\/Pumpkin-Waffles.jpg\" alt=\"\" width=\"557\" height=\"507\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/02\/Pumpkin-Waffles.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/02\/Pumpkin-Waffles-300x273.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Pumpkin Waffles<\/h4>\n<p>adapted from Food Network Magazine, October 2010<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 1\/2 cups strained pumpkin puree<\/li>\n<li>2 1\/4 cups all-purpose flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1 tsp salt<\/li>\n<li>2 tsp pumpkin-pie spice<\/li>\n<li>1\/2 cup packed light brown sugar<\/li>\n<li>2 large eggs, separated<\/li>\n<li>1\/4 cup plain Greek yogurt<\/li>\n<li>1 cup whole milk<\/li>\n<li>4 Tbsp unsalted butter, melted<\/li>\n<\/ul>\n<p>Whisk the flour, baking powder, baking soda, salt and pumpkin-pie spice in a bowl.\u00c2\u00a0 Whisk the sugar and egg yolks in a separate bowl, then whisk in 1 1\/2 cups pumpkin puree, the yogurt and milk.\u00c2\u00a0 Whisk in the melted butter.\u00c2\u00a0 Pour the pumpkin mixture into the flour mixture and stir with a rubber spatula until just combined (it will be lumpy).\u00c2\u00a0 Beat the egg whites with a mixer until stiff, then gently fold into the batter.<\/p>\n<p>Preheat a waffle iron and grease it if it&#8217;s not nonstick.\u00c2\u00a0 Spoon in the batter and cook until golden brown.\u00c2\u00a0 Keep warm in a 250 degree F oven until serving.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2011\/02\/23\/pumpkin-waffles\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Nothing says &#8220;Spring is here!&#8221;
