{"id":56,"date":"2008-02-21T11:16:00","date_gmt":"2008-02-21T17:16:00","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/21\/heart-of-darkness-brownies\/"},"modified":"2008-02-22T23:29:05","modified_gmt":"2008-02-23T05:29:05","slug":"heart-of-darkness-brownies","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/21\/heart-of-darkness-brownies\/","title":{"rendered":"Heart of Darkness Brownies"},"content":{"rendered":"<p>My husband (Picky Apple) surprised me on Valentine&#8217;s Day with two new cookbooks.\u00c2\u00a0 It was really the perfect gift, as I keep adding cookbooks to my Amazon cart for &#8220;pretend&#8221; orders.\u00c2\u00a0 (Do you do that with online shopping, or is it just me?\u00c2\u00a0 Add all the things you want to your cart, just for fun&#8230;.then never order it?\u00c2\u00a0 Or order some of it?\u00c2\u00a0 Or order all of it, and get in trouble, because you went a little overboard?\u00c2\u00a0 Maybe it is just me.)\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 Anyway, the cookbooks: I&#8217;ve already got lots of recipes I can&#8217;t wait to try.\u00c2\u00a0 This brownie recipe comes from <a href=\"http:\/\/www.amazon.com\/Sticky-Chewy-Messy-Gooey-Desserts\/dp\/081185566X\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1203613220&amp;sr=8-1\">Sticky, Chewy, Messy Gooey<\/a>, by Jill O&#8217;Connor.\u00c2\u00a0 It is actually the very first recipe in the book, and I&#8217;m tempted to just cook my way through this cookbook, recipe by recipe.\u00c2\u00a0 They all look so yummy!\u00c2\u00a0 This recipe in particular caught my eye because, like the <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/01\/30\/banana-crunch-muffins\/\">Banana Crunch Muffins <\/a>I make, they are packed with extra add-ins.\u00c2\u00a0 In fact, they are so <a href=\"http:\/\/www.amazon.com\/Sticky-Chewy-Messy-Gooey-Desserts\/dp\/081185566X\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1203613220&amp;sr=8-1\">Sticky, Chewy, Messy Gooey<\/a> that they must be cooked in muffin tins so you don&#8217;t have to deal with cutting up the brownies.\u00c2\u00a0 These are definitely the Ben &amp; Jerry&#8217;s of the brownie world.\u00c2\u00a0 They&#8217;ve got chocolate chips, Snickers, marshmallows, caramel, and toasted pecans.\u00c2\u00a0 I made half with pecans and half without, as requested by The Picky Apple himself.\u00c2\u00a0 I had really high hopes for these brownies, because I love brownies and love all the components. Chocolate?\u00c2\u00a0 Good.\u00c2\u00a0 Pecans?\u00c2\u00a0 Good.\u00c2\u00a0 Snickers?\u00c2\u00a0 Good.\u00c2\u00a0 Marshmallow?\u00c2\u00a0 Good.\u00c2\u00a0 Caramel?\u00c2\u00a0 Good.\u00c2\u00a0 Think Joey from Friends, here (I think from the episode when Rachel made the trifle with meat in it)\u00c2\u00a0 You get the picture.\u00c2\u00a0 I&#8217;m not sure if it is because I wasn&#8217;t feeling that great when they finally came out of the oven or what, but they almost seem TOO rich.\u00c2\u00a0 And that&#8217;s something I <em>never<\/em> <em>ever<\/em> say, nor ever dreamed possible.\u00c2\u00a0 The Picky Apple agreed, and thinks they might be better <em>sans<\/em> marshmallow at the very least.\u00c2\u00a0 (UPDATED 2\/22\/08: I tasted the brownies again today, and I think they taste great!\u00c2\u00a0 Not too rich at all.\u00c2\u00a0 I think I was just having some pre-migrane sensitivities when I was finishing up the brownies the other night&#8230;my vision and hearing always get extra-sensitive right before and during a migrane, and apparently my tastebuds were also affected this time.\u00c2\u00a0 Bleh to migranes.)<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/heart-of-darkness-brownies.jpg\" title=\"heart-of-darkness-brownies.jpg\"><img decoding=\"async\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/heart-of-darkness-brownies.jpg\" alt=\"heart-of-darkness-brownies.jpg\" \/><\/a><\/p>\n<h4>Heart of Darkness Brownies<\/h4>\n<p>Makes 24 brownie cups<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 1\/2 cups (3 sticks) unsalted butter<\/li>\n<li>6 ounces unsweetened chocolate<\/li>\n<li>2 1\/4 cups granulated sugar<\/li>\n<li>1 cup firmly packed light brown sugar<\/li>\n<li>6 large eggs, lightly beaten<\/li>\n<li>1 tablespoon pure vanilla extract<\/li>\n<li>1 1\/2 cups all purpose flour<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1 cup very coarsely chopped raw almonds or pecans, toasted<\/li>\n<li>\u00c2\u00a01 cup semisweet chocolate chips<\/li>\n<li>5 full-size (2.07 ounces each) Snickers Candy Bars, cut into small chunks<\/li>\n<li>3 cups mini marshmallows<\/li>\n<\/ul>\n<p>For the Caramel Drizzle:<\/p>\n<ul>\n<li>6 ounces (about 25) unwrapped caramel candies<\/li>\n<li>2 tablespoons heavy cream<\/li>\n<li>1 teaspoon pure vanilla extract<\/li>\n<li>pinch of salt<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>Position a rack in the middle of the oven and preheat to 350 degrees F.\u00c2\u00a0 Spray two standard 12-cup muffin tins with nonstick cooking spray.<\/p>\n<p>Melt the butter and unsweetened chocolate together in a small saucepan over medium-low heat and stir until smooth.\u00c2\u00a0 Pour the chocolate mixture into a bowl and stir in the sugars, eggs and vanilla.\u00c2\u00a0 Sift the flour and salt into the chocolate mixture and stir just until combined.\u00c2\u00a0 Stir in the cooled chopped nuts, chocolate chips, and chunks of candy bar.<\/p>\n<p>Fill each cupcake cup halfway with batter.\u00c2\u00a0 Bake until the surface of the brownies has a glossy, crackled surface, about 20 minutes.\u00c2\u00a0 Remove the brownies from the oven and top each one with 1\/4 cup of the mini marshmallows.\u00c2\u00a0 Return the brownies to the oven and cook until the marshmallows start the melt and puff up a bit, but not browned too much, about 2 minutes.\u00c2\u00a0 Transfer to a wire rack to cool just enough to handle, then remove from the cupcake cups, running a knife around the edge of each brownie to loosen it from the cup.\u00c2\u00a0 Let cool completely on the wire rack.<\/p>\n<p>While the brownies are cooling, make the caramel drizzle.\u00c2\u00a0 Combine the caramels, cream, vanilla, and salt in a microwave-safe bowl.\u00c2\u00a0 Microwave, uncovered, on high for 1 minute.\u00c2\u00a0 Remove from the microwave and stir until smooth.\u00c2\u00a0 If the caramels are not completely melted, continue heating in 30-second increments, stirring until smooth.<\/p>\n<p>Drizzle the brownies with melted caramel and let cool completely for the caramel to harden.\u00c2\u00a0 Do not chill.\u00c2\u00a0 Serve immediately or store for up to 3 days in a covered container.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/21\/heart-of-darkness-brownies\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>My husband (Picky Apple) surprised me on Valentine&#8217;s Day with two new cookbooks.\u00c2\u00a0 It was really the perfect gift, as I keep adding cookbooks to my Amazon cart for &#8220;pretend&#8221;
