{"id":5429,"date":"2011-01-16T21:42:33","date_gmt":"2011-01-17T03:42:33","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=5429"},"modified":"2011-01-16T21:42:33","modified_gmt":"2011-01-17T03:42:33","slug":"caribbean-chicken-kebabs-with-lime-cayenne-butter","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2011\/01\/16\/caribbean-chicken-kebabs-with-lime-cayenne-butter\/","title":{"rendered":"Caribbean Chicken Kebabs with Lime-Cayenne Butter"},"content":{"rendered":"<p>Even though it was raining, I was bound and determined to grill these kebabs today, and I&#8217;m so glad we did!\u00c2\u00a0 These flavorful kebabs remind of one of my favorite dishes from Pappasitos Cantina.\u00c2\u00a0 The marinade is simple enough, but the lime-cayenne butter (also simple to make!) takes these kebabs to the next level.\u00c2\u00a0 The next time I make these, I might put all of the chicken together and all of the veggies together to grill (as recommended by Alton Brown).\u00c2\u00a0 I&#8217;d also recommend making another little batch of that delicious Lime Cayenne Butter for serving.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/01\/Caribbean-Chicken-Kebabs.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5432\" title=\"Caribbean Chicken Kebabs\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/01\/Caribbean-Chicken-Kebabs.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/01\/Caribbean-Chicken-Kebabs.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/01\/Caribbean-Chicken-Kebabs-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Caribbean Chicken Kebabs with Lime-Cayenne Butter<\/h4>\n<p>from Coastal Living<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/3 cup orange juice<\/li>\n<li>1\/4 cup soy sauce<\/li>\n<li>1 teaspoon minced fresh ginger<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>2 pounds boneless, skinless chicken breasts, cut into 1 1\/2 inch pieces<\/li>\n<li>1 sweet onion, cut into 1 1\/2 inch pieces<\/li>\n<li>2 orange or red bell peppers, cut into 1 1\/2 inch pieces<\/li>\n<li>1 pineapple, cubed<\/li>\n<li>1 pint cherry or grape tomatoes<\/li>\n<li>Lime-Cayenne Butter (recipe below)<\/li>\n<\/ul>\n<p>Combine first 4 ingredients in a shallow dish or large plastic zip-top bag.\u00c2\u00a0 Add chicken and onion, stirring to cover.\u00c2\u00a0 Refrigerate 3 to 6 hours.<\/p>\n<p>Drain chicken and onion;
