and Bacon Frittata with Sweet Potato Hash"},"content":{"rendered":"<p>We never really do much for New Year&#8217;s Eve or New Year&#8217;s Day.\u00c2\u00a0 I have grand plans to host a New Year&#8217;s Day brunch one of these days, but this year I enjoyed some quiet time with my family.\u00c2\u00a0 I did cook some brunch-like food for lunch on New Year&#8217;s Day- a frittata and sweet potatoes.\u00c2\u00a0 This is only my second time cooking frittata, and they are amazing!\u00c2\u00a0 SO much easier than a quiche because you don&#8217;t have to bake a crust, and in theory, a little healthier too (though I suppose that depends on what you put in your frittata).\u00c2\u00a0 And besides, it&#8217;s fun to say <em>frittata<\/em>.\u00c2\u00a0 Frittata, frittata, frittata!<\/p>\n<p>I&#8217;ve been craving sweet potatoes lately, and they made an excellent and colorful side for the frittata.\u00c2\u00a0 This is my favorite way to prepare sweet potatoes!\u00c2\u00a0 I love the contrast of the sweet potatoes with the bold and slightly spicy flavors of the seasonings.\u00c2\u00a0 I&#8217;ve included my sweet potato hash technique below, but I never really measure the seasonings very precisely.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2011\/01\/Spinach-and-Bacon-Frittata.jpg\"><img loading=\"lazy\" Frittata<\/h4>\n<p>recipe from <a href=\"http:\/\/www.5dollardinners.com\/2009\/06\/spinach-and-bacon-frittata.html\">$5 Dinners<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4 slices bacon, crumbled<\/li>\n<li>8 eggs<\/li>\n<li>1\/4 cup <a>milk<\/a><\/li>\n<li>1 tsp <a>salt<\/a> and pepper, each<\/li>\n<li>1\/2 onion, sliced into circles (<em>I used frozen chopped onions<\/em>)<\/li>\n<li>2 tsp olive oil<\/li>\n<li>about 3 cups spinach<\/li>\n<li>1\/2 \u00e2\u20ac\u201c 1 cup shredded <a>cheddar cheese<\/a><\/li>\n<\/ul>\n<p>In a bowl, whisk bacon crumbles, eggs, milk, salt and pepper.\u00c2\u00a0 In skillet, saute onions in 2 tsp olive oil.\u00c2\u00a0 Once brown, add a few tsp of water and <a>cook<\/a> another 1-2 minutes.\u00c2\u00a0 Add spinach and cook over medium heat for 2 minutes, until it wilts.\u00c2\u00a0 Pour egg mixture over the spinach and onions.\u00c2\u00a0 Cook over medium heat for 5 minutes, until the eggs have set around the edges.\u00c2\u00a0 <a>Bake<\/a> at 450 for 5 minutes. <em>(Note: Stick your skillet in the oven, but be sure to remember that the handle will be HOT when you pull it out!) <\/em>Add shredded <a>cheese <\/a>to the top and bake another 1-2 minutes until cheese melts.<\/p>\n<h4>Sweet Potato Hash<\/h4>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 large sweet potato, chopped into approx quarter inch cubes (the smaller they are, the faster they&#8217;ll cook!)<\/li>\n<li>garlic salt<\/li>\n<li>cumin<\/li>\n<li>paprika<\/li>\n<li>cayenne pepper<\/li>\n<li>seasoned salt<\/li>\n<li>thyme<\/li>\n<li>onion powder<\/li>\n<li>salt<\/li>\n<\/ul>\n<p>Heat oil in a large skillet on medium high heat.\u00c2\u00a0 Add sweet potatoes to skillet.\u00c2\u00a0 Add a dash of each of the seasonings to the sweet potatoes, then stir to coat.\u00c2\u00a0 Spread the sweet potatoes into an even layer across the skillet, then cook for 10-15 minutes, stirring every 5 minutes until cooked through and no longer crunchy in the middle.\u00c2\u00a0 Don&#8217;t stir too frequently!\u00c2\u00a0 It&#8217;s been my experience that sweet potatoes take a little longer to cook than regular potatoes.<\/p>\n<div class=\"linkwithin_hook\"
