{"id":5267,"date":"2010-12-20T14:26:48","date_gmt":"2010-12-20T20:26:48","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=5267"},"modified":"2010-12-20T14:26:48","modified_gmt":"2010-12-20T20:26:48","slug":"mexican-chocolate-thumbprint-cookies","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/12\/20\/mexican-chocolate-thumbprint-cookies\/","title":{"rendered":"Mexican Chocolate Thumbprint Cookies"},"content":{"rendered":"<p>The annual holiday baking has begun!!\u00c2\u00a0 I&#8217;ve got a laughably ambitious baking list this year&#8230;<\/p>\n<p>For my Cookie Boxes (given to family and friends), I&#8217;m planning:<\/p>\n<ul>\n<li>Mexican Chocolate Thumbprint Cookies<\/li>\n<li>Cranberry Bliss Bars<\/li>\n<li>Peppermint Bark<\/li>\n<li>Snowballs<\/li>\n<li>Peppermint Double Chocolate Cookies<\/li>\n<li>Momofuku Compost Cookies<\/li>\n<li>Spiced Snowcaps<\/li>\n<\/ul>\n<p>I probably won&#8217;t get them all done, but if I get at least 5 different things in the Cookie Boxes this year, I&#8217;ll be happy.\u00c2\u00a0 The Snowballs (also called Mexican Wedding Cookies) are the only ones I&#8217;ve made before, but this time I&#8217;m using a slightly different recipe.<\/p>\n<p>I&#8217;m also baking Fresh Gingerbread Cake with Whipped Caramel Frosting for Christmas Eve.\u00c2\u00a0 If I&#8217;ve got time, I&#8217;d really like to make Chocolate Bread Pudding Cake with Eggnog Sauce, too.<\/p>\n<p>And let&#8217;s not forget the <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/12\/30\/cinnamon-rolls\/\">Cinnamon Rolls<\/a> that have become a Christmas Day tradition!<\/p>\n<p>So, I&#8217;ll be spending LOTS of time in the kitchen this week.\u00c2\u00a0 Before I dive back in to all the baking, here&#8217;s today&#8217;s recipe.\u00c2\u00a0 I&#8217;ve only just begun, and I&#8217;m already in love with my first recipe! (A sure sign I know how to pick them, right?)\u00c2\u00a0 This is a Bobby Flay recipe, and he&#8217;s one of my favorite chefs.\u00c2\u00a0 These cookies are similar to the <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/12\/19\/chocolate-turtle-cookies\/\">Chocolate Turtle Cookies<\/a> from a few years ago.\u00c2\u00a0 BUT, I like these even better because they&#8217;ve got cinnamon AND chocolate, and the filling is dulce de leche.\u00c2\u00a0 YUM!\u00c2\u00a0 And they just LOOK good, don&#8217;t they?<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Mexican-Chocolate-Thumbprint-Cookies.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5269\" title=\"Mexican Chocolate Thumbprint Cookies\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Mexican-Chocolate-Thumbprint-Cookies.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Mexican-Chocolate-Thumbprint-Cookies.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Mexican-Chocolate-Thumbprint-Cookies-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Mexican Chocolate Thumbprints<\/h4>\n<p>from Good Housekeeping, December 2010<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2\u00c2\u00a0cup(s)   all-purpose flour<\/li>\n<li>1\u00c2\u00a0teaspoon(s)   ground <a>cinnamon<\/a><\/li>\n<li> 1\/2\u00c2\u00a0teaspoon(s)   <a>salt<\/a><\/li>\n<li>6\u00c2\u00a0tablespoon(s)   Dutch-processed cocoa <a>powder<\/a><\/li>\n<li>1\u00c2\u00a0teaspoon(s)   espresso powder<\/li>\n<li>2\u00c2\u00a0tablespoon(s)   vegetable oil<\/li>\n<li>1\u00c2\u00a0teaspoon(s)   vegetable oil, combined with above<\/li>\n<li>1\u00c2\u00a0cup(s)   (2 sticks)  unsalted butter, softened<\/li>\n<li> 3\/4\u00c2\u00a0cup(s)   granulated sugar<\/li>\n<li> 1\/4\u00c2\u00a0cup(s)   packed light brown sugar<\/li>\n<li>2\u00c2\u00a0large   egg yolks<\/li>\n<li>2\u00c2\u00a0teaspoon(s)   <a>vanilla<\/a> <a>extract<\/a><\/li>\n<li>2\u00c2\u00a0large   egg whites, lightly beaten<\/li>\n<li> 1\/2\u00c2\u00a0cup(s)   ground pecans<\/li>\n<li>1\u00c2\u00a0cup(s)   dulce de leche<\/li>\n<\/ul>\n<p>In large bowl, with wire  whisk, stir flour, cinnamon, and salt until blended. In small bowl, with  rubber spatula, combine cocoa powder, espresso powder, and oil until  mixture becomes smooth paste.<\/p>\n<p>In another large bowl, with  mixer on medium-high speed, beat butter and sugars until light and  fluffy. Beat in egg yolks, one at a time, on medium speed until  combined. Beat in vanilla, then cocoa mixture, until combined. Add flour  mixture and beat on low speed just until <a>dough<\/a> comes together. Cover bowl with <a>plastic<\/a> wrap and refrigerate at least 20 minutes or up to 8 hours.<\/p>\n<p>Preheat oven to 350 degrees F. Line 3 cookie sheets with parchment paper.<\/p>\n<p>Roll 2 teaspoons dough into a  ball. Dip top of ball into egg whites, then pecans. Place on prepared  cookie sheet. Repeat with remaining dough, spacing balls 1 1\/2 inches  apart. With thumb or back of wooden spoon, make a deep indentation into  center of each ball.<\/p>\n<p>Bake, 1 sheet of cookies at a  time, 9 minutes or until edges are set but centers are still soft. If  necessary, make indentations again. Cool on pan on wire rack 2 minutes.  With metal spatula, carefully transfer cookies to rack and cool  completely.
