{"id":5114,"date":"2010-12-02T23:20:16","date_gmt":"2010-12-03T05:20:16","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=5114"},"modified":"2010-12-02T23:20:16","modified_gmt":"2010-12-03T05:20:16","slug":"banana-crumb-cake","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/12\/02\/banana-crumb-cake\/","title":{"rendered":"Banana Crumb Cake"},"content":{"rendered":"<p>Here&#8217;s a great way to use up those bananas that turned brown before you had a chance to eat them.\u00c2\u00a0 That&#8217;s been happening to me a lot lately!\u00c2\u00a0 Instead of baking muffins or banana bread, how about a Banana Crumb Cake?<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Banana-Crumb-Cake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5117\" title=\"Banana Crumb Cake\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Banana-Crumb-Cake.jpg\" alt=\"\" width=\"557\" height=\"238\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Banana-Crumb-Cake.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/12\/Banana-Crumb-Cake-300x128.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Banana Crumb Cake<\/h4>\n<p>recipe from Good Housekeeping, December 2010<\/p>\n<p>Makes 12 servings<\/p>\n<p>Coconut-Pecan Topping:<\/p>\n<ul>\n<li>1\/2 cup pecans, toasted and chopped<\/li>\n<li>1\/4 cup unsweetened shredded coconut, toasted<\/li>\n<li>1\/4 cup all-purpose flour<\/li>\n<li>1\/4 cup packed dark brown sugar<\/li>\n<li>1\/4 tsp.\u00c2\u00a0 ground cinnamon<\/li>\n<li>2 Tbsp. butter or margarine<\/li>\n<\/ul>\n<p>Banana Cake:<\/p>\n<ul>\n<li>1 1\/2 cup all-purpose flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>1\/2 tsp.\u00c2\u00a0 baking soda<\/li>\n<li>1\/2 tsp.\u00c2\u00a0 ground cinnamon<\/li>\n<li>4 Tbsp. butter or margarine, at room temperature<\/li>\n<li>1\/2 cup packed dark brown sugar<\/li>\n<li>3 Tbsp pure honey<\/li>\n<li>2 lg eggs, lightly beaten<\/li>\n<li>1 cup mashed bananas (from 3 very ripe medium bananas)<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<\/ul>\n<p>Prepare Coconut-Pecan Topping: In medium bowl, combine pecans, coconut, flour, brown sugar, and cinnamon.\u00c2\u00a0 With pastry blender or 2 knives used scissors-fashion, cut in butter until mixture resembles coarse crumbs, with a few pea-size chunks remaining.<\/p>\n<p>Prepare Banana Cake: Preheat oven to 350 degrees F.\u00c2\u00a0 Grease 9-inch springform pan; line bottom with parchment paper and grease parchment.\u00c2\u00a0 In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon until well blended.\u00c2\u00a0 In a large bowl, with mixer on medium speed, beat butter, sugar, and honey until light and creamy, about 5 minutes., scraping bowl occasionally.\u00c2\u00a0 Gradually add eggs, beating after each addition.\u00c2\u00a0 On low speed, add half of flour mixture, then mashed bananas and vanilla. Add remaining flour mixture and beat just until smooth.<\/p>\n<p>Spoon batter into prepared pan and spread evenly.\u00c2\u00a0 Sprinkle with crumb topping.\u00c2\u00a0 Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.\u00c2\u00a0 Cool cake in pan on wire rack 10 minutes.\u00c2\u00a0 With small metal spatula, loosen cake from side of pan and remove\u00c2\u00a0 Cool completely.\u00c2\u00a0 (Cake can be wrapped tightly in plastic wrap and kept at room temperature up to 1 day.)<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2010\/12\/02\/banana-crumb-cake\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Here&#8217;s a great way to use up those bananas that turned brown before you had a chance to eat them.\u00c2\u00a0 That&#8217;s been happening to me a lot lately!\u00c2\u00a0 Instead of baking muffins or banana bread, how about a Banana Crumb Cake?
