Fritters"},"content":{"rendered":"<p>Whenever The Picky Apple gets doughnuts (or <em>donuts,<\/em> however you spell it), I always request an apple fritter.\u00c2\u00a0 Plain glazed donuts are great (and obviously the favorite choice of The Picky Apple, because they&#8217;re the plainest donut of all), chocolate glazed donuts are even better, but my favorite donut is the apple fritter.\u00c2\u00a0 Crunchy, sweet, and melt-in-your mouth on the outside, cinnamon-y dough with apple chunks on the inside.\u00c2\u00a0 At least, that&#8217;s the way they are made at Shipley&#8217;s, our favorite donut shop.<\/p>\n<p>When I saw that <a href=\"http:\/\/www.culinaryconcoctionsbypeabody.com\/\">Peabody<\/a> and <a href=\"http:\/\/tartelette.blogspot.com\/\">Tartelette<\/a> were hosting <a href=\"http:\/\/tartelette.blogspot.com\/2008\/01\/time-to-make-doughnuts_15.html\">Time to Make the Doughnuts<\/a>, I knew I wanted to participate.\u00c2\u00a0 I briefly considered making beignets, having just had Mardi Gras and New Orleans on the brain.\u00c2\u00a0 As I mentioned in <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/05\/mardi-gras-king-cake\/\">my King Cake post<\/a>, I used to live in Louisiana, and whenever we went to New Orleans, we always had beignets at <a href=\"http:\/\/www.cafedumonde.com\/main.html\">Cafe Du Monde<\/a> at least once or twice during our stay.\u00c2\u00a0 Ah, the smell of fried dough and coffee in the air, the tables and chairs slightly sticky from all the powdered sugar.\u00c2\u00a0 I&#8217;ve made beignets once or twice before.\u00c2\u00a0 Beignets are delicious and fairly simple to make, but I&#8217;ve been craving apple fritters.\u00c2\u00a0 Besides, I&#8217;ve never made apple fritters, and there&#8217;s something really satisfying about trying\/creating a new recipe that turns out well, don&#8217;t you think? \u00c2\u00a0 Notice how I said it&#8217;s satisfying <em>when it turns out well<\/em>.<\/p>\n<p>My foray into the world of apple fritters seemed doomed from the get-go.\u00c2\u00a0 I had lots of trouble finding a recipe.\u00c2\u00a0 Many apple fritter recipes I ran across were for fried apple slices, which I&#8217;m sure are great, but not what I had in mind.\u00c2\u00a0 After finding a few recipes that were close to what I was looking for, I decided to do my own thing.<\/p>\n<p>The key to any good donut is lots of hot oil because after all, donuts are fried dough.\u00c2\u00a0 I was low on oil, so decided to substitute Crisco.\u00c2\u00a0 Substitutions already?\u00c2\u00a0 That should be your first clue that things are about to go horribly wrong.\u00c2\u00a0 But how bad could it be?\u00c2\u00a0 Besides, the Crisco was butter flavored, so that should taste good, right?\u00c2\u00a0 Right?\u00c2\u00a0 WRONG.\u00c2\u00a0 Very very very wrong.\u00c2\u00a0 The first batch of apple fritters were overwhelmed by the yucky taste of artificial butter.\u00c2\u00a0 And they were too salty.\u00c2\u00a0 <em>And<\/em> the texture wasn&#8217;t quite right.\u00c2\u00a0 <em>And<\/em> the powdered sugar coating didn&#8217;t stick because I waited too long.\u00c2\u00a0 Need I go on?\u00c2\u00a0 All in all, disastrous.\u00c2\u00a0 The Picky Apple took one bite of his, and promptly spit it out and threw the rest in the trash.\u00c2\u00a0 I tried so hard to like them, thought maybe they would grow on me, but they did not.\u00c2\u00a0 I decided maybe it wasn&#8217;t meant to be&#8230;.<\/p>\n<p>But all weekend, I kept thinking about apple fritters, reading other entries in the doughnut event, and decided to give it one more try this afternoon with the event deadline looming.\u00c2\u00a0 I couldn&#8217;t stand being defeated by the apple fritters.\u00c2\u00a0 For my second attempt, I used oil and changed up my recipe a little.\u00c2\u00a0 This batch turned out much better\u00c2\u00a0 (because really, they couldn&#8217;t get much worse than that first batch!). \u00c2\u00a0 They still weren&#8217;t as good as the apple fritters from Shipley&#8217;s&#8230;.not even close.\u00c2\u00a0 But they were decent, and I&#8217;m glad I attempted donuts for this event.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/apple-fritters.jpg\" title=\"apple-fritters.jpg\"><img decoding=\"async\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/apple-fritters.jpg\" alt=\"apple-fritters.jpg\" \/><\/a><\/p>\n<h4>Apple Fritters<\/h4>\n<p>Fritter:<\/p>\n<ul>\n<li>1 cup all purpose flour<\/li>\n<li>1\/4 cup sugar<\/li>\n<li>3\/4 teaspoon salt<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1 teaspoon cinnamon<\/li>\n<li>1\/3 cup milk<\/li>\n<li>1 egg<\/li>\n<li>1 cup chopped apple<\/li>\n<\/ul>\n<p>Glaze:<\/p>\n<ul>\n<li>2 cups powdered sugar<\/li>\n<li>1 1\/2 tablespoons milk<\/li>\n<\/ul>\n<p>Directions:\u00c2\u00a0\u00c2\u00a0 Combine flour, sugar, salt, baking powder, cinnamon.\u00c2\u00a0 Stir in milk and egg until just combined.\u00c2\u00a0 Fold in apple.\u00c2\u00a0 Pour oil into skillet so that it is approximately 1 1\/2 deep.\u00c2\u00a0 Heat oil on high.\u00c2\u00a0 Oil is ready when dough floats to top.\u00c2\u00a0 Carefully add dough to oil in heaping teaspoons.\u00c2\u00a0 Cook until brown, about 2 minutes, then flip.\u00c2\u00a0 Cook another 1-2 minutes, until both sides are browned.\u00c2\u00a0 Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack.\u00c2\u00a0 Make glaze by stirring milk and powdered sugar together in a small bowl.\u00c2\u00a0 Drizzle over apple fritters.\u00c2\u00a0 Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side.\u00c2\u00a0 Best served warm.<\/p>\n<div class=\"linkwithin_hook\"
