href=\"http:\/\/www.amazon.com\/gp\/product\/0811856240?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0811856240\">The Best Casserole Cookbook Ever<\/a> by Beatrice Ojakangas.\u00c2\u00a0 I am not a huge casserole fan, but I love this cookbook!\u00c2\u00a0 I actually checked this cookbook out from the library first, and started bookmarking all the recipes I wanted to try before I returned the book.\u00c2\u00a0 When I kept marking every other page, I realized that this was definitely a book that I needed to own.\u00c2\u00a0 Lucky for me, this wonderful cookbook turned up as a birthday present a few days later.\u00c2\u00a0 What I love most about this cookbook is that it contains more than just the traditional \u00e2\u20ac\u0153cream of\u00c2\u00a0 soup\u00e2\u20ac\u009d laden casseroles.\u00c2\u00a0 In fact, this cookbook provides several sauce recipes to use in place of those canned soups.\u00c2\u00a0 Also, with more than 500 recipes, some of these are stretching it a bit to be called \u00e2\u20ac\u0153casseroles\u00e2\u20ac\u009d: there are breads, desserts, dips and appetizers in addition to all of the casseroles.\u00c2\u00a0 I\u00e2\u20ac\u2122ve only tried 2 recipes so far, but they\u00e2\u20ac\u2122ve both been keepers.\u00c2\u00a0 You\u00e2\u20ac\u2122ll definitely be seeing more recipes from this cookbook!<\/p>\n<p style=\"text-align: center;\"><a first recipe I want to share with you from this cookbook is for Cheesy Scalloped Potatoes.\u00c2\u00a0 My mom makes a similar dish like this on occasion, but I\u00e2\u20ac\u2122ve never attempted to make it myself.\u00c2\u00a0 I could eat potatoes all day, every day, and last week I was just craving some cheesy potatoes.\u00c2\u00a0 This dish is a little labor intensive, but definitely worth it.\u00c2\u00a0 These potatoes taste great leftover as well and I ate them for both lunch and yes, even breakfast in the next few days.\u00c2\u00a0 This isn&#8217;t a great photo, but look at all that crunchy goodness on top!\u00c2\u00a0 I just love the contrast of the crunchy bits on top with the creamy cheesy potatoes below!\u00c2\u00a0 Delicious!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" Potatoes<\/h4>\n<p>From <a href=\"http:\/\/www.amazon.com\/gp\/product\/0811856240?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0811856240\">The Best Casserole Cookbook Ever<\/a>, by Beatrice Ojakangas<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>6      medium baking potatoes, peeled and thinly sliced<\/li>\n<li>1      small onion, thinly sliced<\/li>\n<li>2 cups      shredded Cheddar cheese<\/li>\n<li>Salt<\/li>\n<li>Pepper<\/li>\n<li>1      recipe Basic White Sauce (recipe follows)<\/li>\n<li>\u00c2\u00bd cup      water<\/li>\n<\/ul>\n<p>Preheat the oven to 350 degrees F.\u00c2\u00a0 Coat a 9-inch square baking dish with cooking spray (Picky Apple note: maybe my potatoes were just extra large, but I almost needed a bigger pan!)<\/p>\n<p>Rinse the sliced potatoes in cold water to prevent browning.\u00c2\u00a0 Pat dry with paper towels.<\/p>\n<p>Place a layer of potatoes in the bottom of the baking dish and sprinkle with onion, cheese, salt, and pepper.\u00c2\u00a0 Continue layering the potatoes, onion, cheese, and seasonings in this way, ending with a layer of cheese.<\/p>\n<p>Mix the sauce or soup and the water in a small bowl and pour over the casserole.\u00c2\u00a0 (At this point you can cover and refrigerate for up to 1 day.\u00c2\u00a0 Add 5 to 10 minutes to the baking time.)<\/p>\n<p>Bake for 1 \u00c2\u00bd to 2 hours, or until the potatoes are tender.<\/p>\n<p>Basic White Sauce<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>4      tablespoons butter<\/li>\n<li>\u00c2\u00bc cup      all-purpose flour<\/li>\n<li>\u00c2\u00bd      teaspoon salt<\/li>\n<li>\u00c2\u00bc      teaspoon pepper<\/li>\n<li>1 cup      hot milk<\/li>\n<\/ul>\n<p>In a medium saucepan, melt the butter.\u00c2\u00a0 Stir in the flour, salt, and pepper and cook over medium heat, stirring constantly, for 3 minutes, or until the mixture is smooth and bubbly.<\/p>\n<p>Whisk in the hot milk, keeping the mixture smooth and free of lumps.\u00c2\u00a0 Bring to a boil, whisking constantly, reducing the heat, and cook until thickened and smooth.\u00c2\u00a0 Use the sauce hot, or cover and refrigerate until ready to
