{"id":4477,"date":"2010-10-12T20:24:00","date_gmt":"2010-10-13T02:24:00","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=4477"},"modified":"2010-10-12T20:24:00","modified_gmt":"2010-10-13T02:24:00","slug":"baked-mac-and-cheese","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/10\/12\/baked-mac-and-cheese\/","title":{"rendered":"Baked Mac and Cheese"},"content":{"rendered":"<p>Blogging is definitely one of those things that can be hard to get back to if you take a few days off.\u00c2\u00a0 Part of my last few days <em>sans <\/em>blogging was about relaxing over the weekend, and then I just had trouble getting started again.<\/p>\n<p>So today, you get a delicious recipe for Baked Mac and Cheese!\u00c2\u00a0 I&#8217;ve attempted homemade mac and cheese several times, but this is first recipe that&#8217;s ever been a success.\u00c2\u00a0 The Picky Apple gave it two thumbs up, and I&#8217;m already looking forward to trying out the leftovers tomorrow.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/10\/Mac-and-Cheese.jpg\"><\/a><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/10\/Mac-and-Cheese1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4483\" title=\"Mac and Cheese\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/10\/Mac-and-Cheese1.jpg\" alt=\"\" width=\"557\" height=\"337\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/10\/Mac-and-Cheese1.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/10\/Mac-and-Cheese1-300x181.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h3>Baked Mac and Cheese<\/h3>\n<p>from <a href=\"http:\/\/www.browneyedbaker.com\/2007\/03\/28\/comfort-food\/\">Brown Eyed Baker<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>8 oz. elbow macaroni<\/li>\n<li>4 Tbsp. butter, divided<\/li>\n<li>2 Tbsp. flour<\/li>\n<li>1\/2 tsp. salt<\/li>\n<li>1\/2 tsp. dry mustard<\/li>\n<li>2 cups milk<\/li>\n<li>1\/2 cup cheddar cheese, divided<\/li>\n<li>1\/2 cup mozzarella cheese, divided<\/li>\n<li>1\/2 cup Swiss cheese, divided<\/li>\n<li>1\/2 cup seasoned bread crumbs<\/li>\n<\/ul>\n<p>Cook macaroni according to package directions; drain.\u00c2\u00a0 Preheat oven to 400 degrees.\u00c2\u00a0 Melt 2 T. butter in a large saucepan over medium heat.  Add flour  and salt and stir until mixture is smooth.  Stir in dry mustard.  Add  milk gradually, stirring constantly.\u00c2\u00a0 Cook over low heat, stirring constantly, until thickened, about 5 minutes.\u00c2\u00a0 Stir in 1\/4 cup of the cheddar, 1\/4 cup of the mozzarella, and  1\/4 cup of the Swiss.  Mix cheese sauce and macaroni in a large bowl.   Spoon into a 9 x 7 inch baking dish.  Sprinkle with remaining cheddar,  mozzarella and Swiss.\u00c2\u00a0 Melt remaining butter in saucepan over medium heat.  Combine  bread crumbs and melted butter in a small bowl and mix well.  Sprinkle  on top of the cheese.
