{"id":420,"date":"2009-09-23T21:17:43","date_gmt":"2009-09-24T03:17:43","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=420"},"modified":"2009-09-23T21:19:02","modified_gmt":"2009-09-24T03:19:02","slug":"pumpkin-spice-granola","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/23\/pumpkin-spice-granola\/","title":{"rendered":"Pumpkin Spice Granola"},"content":{"rendered":"<p style=\"text-align: left;\">I&#8217;ve mentioned before my <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/06\/04\/oatmeal-blueberry-applesauce-muffins\/\">love for oatmeal at breakfast<\/a>, but every once in a while I like to mix things up with yogurt and granola.\u00c2\u00a0 Ok, I realize the granola has oatmeal in it, but it is presented in a different (crunchier) format.\u00c2\u00a0 I&#8217;ve got quite a few granola recipes on file to try and since it&#8217;s Fall I opted for this Pumpkin Spice Granola.\u00c2\u00a0 This is my new favorite granola!\u00c2\u00a0 I&#8217;ve been eating Pumpkin Spice Granola for breakfast, snacks, and sometimes even dessert.\u00c2\u00a0 I am SO in love with this granola.\u00c2\u00a0 I eat it with Fage 0% Plain Greek Yogurt.\u00c2\u00a0 Mmm!\u00c2\u00a0 I&#8217;ll be making another batch tomorrow&#8230;.<\/p>\n<p style=\"text-align: left;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-424\" title=\"Pumpkin Spice Granola\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/09\/Pumpkin-Spice-Granola.jpg\" alt=\"Pumpkin Spice Granola\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/09\/Pumpkin-Spice-Granola.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/09\/Pumpkin-Spice-Granola-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<p style=\"text-align: left;\"><strong>Pumpkin Spice Granola<\/strong><\/p>\n<p style=\"text-align: left;\">from <a href=\"http:\/\/bakingbites.com\/2008\/09\/pumpkin-spice-granola\/\">Baking Bites<\/a><\/p>\n<p style=\"text-align: left;\">Ingredients:<\/p>\n<ul>\n<li> 3 1\/2 cups rolled oats<\/li>\n<li>2 1\/2 cups puffed rice cereal<\/li>\n<li>2 tsp pumpkin pie spice<\/li>\n<li>pinch ground cardamom<\/li>\n<li>3\/4 tsp salt<\/li>\n<li>3\/4 cup brown sugar<\/li>\n<li>1\/2 cup plain pureed pumpkin<\/li>\n<li>1\/4 cup plain applesauce<\/li>\n<li>1\/4 cup maple syrup<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 cup chopped pecans<\/li>\n<li>1 cup dried cranberries<\/li>\n<\/ul>\n<p style=\"text-align: center;\">\n<p>Preheat the oven to 325F and line a large baking sheet (or two smaller sheets) with parchment paper.\u00c2\u00a0 In a large bowl, combine oats, puffed rice cereal. In a medium bowl, whisk together spices, salt, sugar, applesauce (do not use chunky applesauce), pumpkin puree, maple syrup and vanilla. Whisk until very smooth.\u00c2\u00a0 Pour wet ingredients into dry ingredients and stir with a spatula or large spoon until mixture is evenly coated. Spread on prepared baking sheet(s) in an even layer.\u00c2\u00a0 Bake for 30 minutes, then turn over the granola carefully using a large wide spatula. Sprinkle the nuts onto the granola, then bake everything for additional 15 minutes, until crisp and golden. Depending on the size of your baking sheet, the center might not be fully dried if your granola layer is thick, so if necessary remove the edges of the cooked granola to a cooling rack and let the rest cook for another 10-15 minutes until done.\u00c2\u00a0 Cool on pan or on a fine wire rack.\u00c2\u00a0 Break granola up as desired and store in an airtight container.
