Enchilada Casserole"},"content":{"rendered":"<p>Although I&#8217;ve tried many recipes like this in the past, this is a new (to me) spin on a Tex-Mex casserole.\u00c2\u00a0 This makes tons (I halved the recipe) and the leftovers keep well.\u00c2\u00a0 I&#8217;m guessing it would even freeze well too, making it a perfect dish to give to a new mommy or a new neighbor.\u00c2\u00a0 Serve with <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/01\/22\/mexican-rice\/\">Mexican Rice<\/a> and <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/07\/03\/corn-and-goat-cheese-salad-with-cilantro-honey-lime-dressing\/\">Corn and Goat Cheese Salad with Cilantro Honey Lime Dressing<\/a> for a Enchilada Casserole<\/h4>\n<p>adapted from Family Circle, May 2009<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 cups shredded, cooked chicken (use rotisserie or leftover <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/21\/perfect-roast-chicken\/\">Perfect Roast Chicken<\/a>)<\/li>\n<li>1 packet of taco seasoning or 3 tablespoons of Homemade Taco Seasoning (recipe coming soon)<\/li>\n<li>2 cups salsa verde<\/li>\n<li>9 corn tortillas<\/li>\n<li>1 can (15.5 ounces) refried beans, warmed<\/li>\n<li>8 ounces sour cream<\/li>\n<li>3 cups shredded colby jack cheese<\/li>\n<\/ul>\n<p>Heat oven to 350 degrees F.\u00c2\u00a0 Mix chicken, taco seasoning, 1\/2 cup water and salsa verde in a skillet.\u00c2\u00a0 Simmer on medium heat for 10 minutes.<\/p>\n<p>Coat 13x9x2-inch pan with nonstick cooking spray.\u00c2\u00a0 Cover bottom of pan with 3 corn tortillas, overlapping.\u00c2\u00a0 Pour half of the chicken mixture on the tortillas.\u00c2\u00a0 Cover with 3 more tortillas.\u00c2\u00a0 Spread with warmed beans and the sour cream.<\/p>\n<p>Sprinkle half the cheese over the beans and sour cream, and cover with the remaining 3 tortillas.\u00c2\u00a0 Top with remaining chicken mixture, followed by remaining cheese.\u00c2\u00a0 Bake at 350 degrees F for 25 to 28 minutes, until bubbly.<\/p>\n<div
