{"id":41,"date":"2008-02-07T21:45:47","date_gmt":"2008-02-08T03:45:47","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/07\/blueberry-crumb-cake\/"},"modified":"2008-02-07T21:45:47","modified_gmt":"2008-02-08T03:45:47","slug":"blueberry-crumb-cake","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/07\/blueberry-crumb-cake\/","title":{"rendered":"Blueberry Crumb Cake"},"content":{"rendered":"<p>This week I bought blueberries on sale.\u00c2\u00a0 The Picky Apple likes blueberry muffins (which surprises me a little), so I thought I&#8217;d make muffins for him to take to work.\u00c2\u00a0 Unless I bake him something tasty (like <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/01\/30\/banana-crunch-muffins\/\" target=\"_blank\">Banana Crunch Muffins<\/a>) for breakfast, he typically skips it.\u00c2\u00a0 I&#8217;ve tried a few different blueberry muffin recipes from various cookbooks I own, but still haven&#8217;t settled upon a go-to recipe.\u00c2\u00a0 While searching for a new recipe to try, I ran across this recipe for Blueberry Crumb Cake.\u00c2\u00a0 I had all of the ingredients (or an easy substitution) on hand.\u00c2\u00a0 This crumb cake turned out perfectly, and The Picky Apple gave it two thumbs up.\u00c2\u00a0 Allspice gives the cake a slightly more complex flavor than basic cinnamon, and the cake is not overly sweet.\u00c2\u00a0 I think this could easily be converted to muffins, which I may try next time I make this.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/blueberry-crumb-cake.jpg\" title=\"blueberry-crumb-cake.jpg\"><img decoding=\"async\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/blueberry-crumb-cake.jpg\" alt=\"blueberry-crumb-cake.jpg\" \/><\/a><\/p>\n<h4>\u00c2\u00a0Blueberry Crumb Cake<\/h4>\n<p>from <a href=\"http:\/\/www.marthastewart.com\/recipe\/blueberry-crumb-cake?autonomy_kw=blueberries&amp;rsc=header_23\" target=\"_blank\">Everyday Food<\/a><\/p>\n<p>Serves 9<\/p>\n<p>Ingredients:<\/p>\n<p>For the streusel topping:<\/p>\n<ul>\n<li>1  cup all-purpose flour, (spooned and leveled)<\/li>\n<li>1\/2 cup packed light-brown sugar<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/2 cup butter<\/li>\n<\/ul>\n<p>For the cake:<\/p>\n<ul>\n<li>4 tablespoons unsalted butter, softened, plus more for pan<\/li>\n<li>1 1\/2 cups all-purpose flour, plus more for pan<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/4 teaspoon allspice\u00c2\u00a0 (See Picky Apple Note, below)<\/li>\n<li>3\/4 cup sugar<\/li>\n<li>1 large egg<\/li>\n<li>2\/3 cup buttermilk\u00c2\u00a0 (See Picky Apple Note, below)<\/li>\n<li>1 1\/2 cups blueberries<\/li>\n<li> Confectioners&#8217; sugar, for dusting<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li> <span>Preheat oven to 350 degrees. Make streusel topping: Butter and flour a 9-inch square baking pan. Make the topping: In a medium bowl, stir together flour, brown sugar, and salt. Cut in the butter using your hands or a pastry blender until large, moist crumbs form. Chill.<\/span><\/li>\n<li> <span>Butter and flour a 9-inch square baking pan. In a medium bowl, whisk together 1 1\/2 cups flour, baking powder, baking soda, salt, and allspice. In a large bowl, beat the butter and sugar with an electric mixer until fluffy. Add egg; beat well. Add flour mixture and buttermilk alternately until just combined. (Batter will be very stiff.) In a large bowl, toss the blueberries with 1 teaspoon flour. Fold blueberries into the batter; spoon into prepared pan.<\/span><\/li>\n<li> <span>Sprinkle cake with streusel topping. Bake until golden brown and a tester comes out clean, 45 to 50 minutes. Let cool completely.
