and Potato Hash"},"content":{"rendered":"<p>One thing The Picky Apple DOES like is scrambled eggs.\u00c2\u00a0 He also loves bacon.\u00c2\u00a0 So every once in a while we have breakfast for dinner, with scrambled eggs, bacon, and hash browns.\u00c2\u00a0 Many times this is in the form of breakfast tacos.\u00c2\u00a0 This week I decided to take that to the next level and make Migas, which is tortillas scrambled with bacon and eggs.\u00c2\u00a0\u00c2\u00a0 I was concerned that the tortillas would be soggy once scrambled with the eggs, but it turned out great.\u00c2\u00a0 This recipe will definitely be added to our favorite recipe file.<\/p>\n<p>To go with the Migas, I threw together my Potato Hash, which I created on the fly one evening when I wanted a potato side dish.\u00c2\u00a0 A dash of this, a sprinkle of that&#8230;each time I make it, it turns out a little bit different.\u00c2\u00a0 This time I measured as I added the spices so I could pass this recipe along to you.\u00c2\u00a0 Sometime I throw in peppers, onions, and\/or garlic, but I left those out this time since the Migas already had peppers, onions, and garlic.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/migas.jpg\" title=\"migas.jpg\"><img decoding=\"async\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/02\/migas.jpg\" alt=\"migas.jpg\" \/><\/a><\/p>\n<h4>Migas<\/h4>\n<p>Adapted from <a href=\"http:\/\/www.amazon.com\/Gourmet-Cookbook-More-than-recipes\/dp\/061880692X\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1202356901&amp;sr=8-1\" target=\"_blank\">The Gourmet Cookbook<\/a><\/p>\n<p>Serves 2 to 3<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 thick bacon slices<\/li>\n<li>3 tablespoons canola oil<\/li>\n<li>6 (6-7 inch) slightly dried leftover corn tortillas, torn into 1 to 1 1\/2 inch pieces (See note below)<\/li>\n<li>\u00c2\u00a01\/2 cup finely chopped white onion<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>1 or 2 jalapeno chiles (depending on how much spice you want), seeded and finely chopped<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>4 large eggs, lightly beaten<\/li>\n<li>1\/2 cup shredded Monterey Jack or White Cheddar<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>Cook bacon in a large skillet over moderate heat, turning occasionally, until crisp, 5 to 7 minutes.\u00c2\u00a0 Transfer to paper towels to drain.\u00c2\u00a0 Reserve approximately a tablespoon of bacon grease for later.<\/p>\n<p>Heat oil in a 12 inch heavy skillet over moderately high heat but not smoking.\u00c2\u00a0 Fry tortilla pieces a handful at a time, turning them frequently, until pale golden, 2 to 3 minutes.\u00c2\u00a0 Transfer to paper towels to drain.<\/p>\n<p>Add onion, garlic, chiles to skillet containing bacon grease, and cook, stirring until onion is pale golden and chiles are tender, about 5 minutes.\u00c2\u00a0 Add cumin and tortilla pieces and stir until well combined.<\/p>\n<p>Pour eggs over tortilla mixture and stir in cheese.\u00c2\u00a0 Crumble bacon and add to eggs and tortillas.\u00c2\u00a0 Cook over moderately high heat, stirring gently, until eggs have reached desired consistency.<\/p>\n<p><strong>Picky Apple Note: <\/strong>You can bake tortillas in a 300 degree F oven for 5 to 10 minutes if your tortillas aren&#8217;t stale.<\/p>\n<h4>Potato Hash<\/h4>\n<p>Serves 2 to 3<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 potato, diced (approx. 1\/2 inch chunks)<\/li>\n<li>1 tablespoon vegetable oil<\/li>\n<li>1\/2 teaspoon garlic salt<\/li>\n<li>1\/4 teaspoon cayenne<\/li>\n<li>1\/4 teaspoon cumin<\/li>\n<li>1\/4 teaspoon garlic powder<\/li>\n<li>1\/4 teaspoon chili powder<\/li>\n<li>1\/4\u00c2\u00a0 teaspoon paprika<\/li>\n<li>1\/4 teaspoon black pepper<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<\/ul>\n<p>Directions:\u00c2\u00a0 Heat oil large skillet over medium to high heat.\u00c2\u00a0 Add potato and spices.\u00c2\u00a0 Stir frequently.\u00c2\u00a0 Cook until golden brown and potato is cooked through, approximately 15 to 20 minutes.<\/p>\n<div class=\"linkwithin_hook\"
