{"id":3893,"date":"2010-08-20T20:22:14","date_gmt":"2010-08-21T02:22:14","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=3893"},"modified":"2010-09-25T15:28:50","modified_gmt":"2010-09-25T21:28:50","slug":"best-blueberry-oatmeal-bars","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/08\/20\/best-blueberry-oatmeal-bars\/","title":{"rendered":"Best Blueberry Oatmeal Bars"},"content":{"rendered":"<p>Okay, so the title of this recipe is actually <strong><em>BERT&#8217;S <\/em><\/strong> Best Blueberry Oatmeal Bars.\u00c2\u00a0 You know, Bert&#8230;.as in Bert and Ernie?\u00c2\u00a0 This recipe is from a Sesame Street cookbook called <a href=\"http:\/\/www.amazon.com\/gp\/product\/0470523077?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0470523077\">C is for Cooking: Recipes From the Street<\/a>.<\/p>\n<p><a href=\"http:\/\/www.amazon.com\/gp\/product\/0470523077?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0470523077\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3897\" title=\"C is for Cooking\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/08\/C-is-for-Cooking.jpg\" alt=\"\" width=\"148\" height=\"160\" \/><\/a><\/p>\n<p>I bought this with dreams of cooking through the entire cookbook with The Littlest Apple, enjoying the experience as we went along and hopefully finding a few new things for him to eat.\u00c2\u00a0 While we DO cook and bake together fairly regularly, this particular experience was less than idyllic, ending with The Littlest Apple crying and in time out.\u00c2\u00a0 Just keeping it real, folks.<\/p>\n<p>Honestly, this cookbook pleasantly surprised me.\u00c2\u00a0 As expected, there are lots of easy recipes a preschooler can make, and it is certainly geared toward kid favorites (chicken nuggets, mac &amp; cheese, pizza).\u00c2\u00a0 Here are some of the titles: Pancakes with Strawberry Sauce, Cookie Monster&#8217;s Homemade Peanut Butter Sandwiches (the recipe is for the peanut butter), Ernie&#8217;s Frozen Fun Pops, Zoe&#8217;s Rainbow Salad Boats.<\/p>\n<p>But the first section of the cookbook has recipes from Martha, Emeril, Jamie Oliver, Rachel Ray, and Alton Brown.\u00c2\u00a0 The rest of the cookbook also includes some surprising recipes like Grover&#8217;s African-Style Peanut Butter Soup, Bert&#8217;s Tutt-Frutti Turkey Salad (which has curry), Grover&#8217;s Egg and Sausage Strata and this recipe for Blueberry Oatmeal Bars.\u00c2\u00a0 We all really liked these Bars (though it does seem to be one of the less healthy recipes from the book!).\u00c2\u00a0 Great for breakfast, snack or dessert.<\/p>\n<p>This cookbook also contains lots of useful information about getting kids involved in the kitchen and making food fun.\u00c2\u00a0 Each recipe includes at least one kid-friendly step, and there are even some Sesame Street stickers at the end.\u00c2\u00a0 This is such a cute cookbook!<\/p>\n<h4>Best Blueberry Oatmeal Bars<\/h4>\n<p>from <a href=\"http:\/\/www.amazon.com\/gp\/product\/0470523077?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0470523077\">C is For Cooking<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 1\/2 cups all-purpose flour<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1 cup packed light brown sugar<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1\/2 cup (1 stick) butter, softened<\/li>\n<li>1\/2 cup vegetable oil<\/li>\n<li>2 eggs<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>3 cups uncooked old-fashioned oats<\/li>\n<li>1 pint (2 cups) fresh blueberries<\/li>\n<\/ul>\n<p>Preheat the oven to 350 degrees F.\u00c2\u00a0 Line a 13 x 9 inch baking pan with aluminum foil.\u00c2\u00a0 Lightly grease the foil with nonstick cooking spray or vegetable oil.<\/p>\n<p>In a small bowl, whisk together the flour, cinnamon, baking soda, and salt until well-mixed.<\/p>\n<p>In a large bowl with an electric mixer at medium speed, beat together the brown sugar, granulated sugar, and butter until fluffy.\u00c2\u00a0 Beat in the oil, eggs, and vanilla.\u00c2\u00a0 With a wooden spoon, mix in the flour mixture until blended.\u00c2\u00a0 Stir in the oats and blueberries.<\/p>\n<p>Use a rubber spatula to spread the batter evenly in the pan.<\/p>\n<p>Bake until golden brown and a toothpick inserted in the center comes out clean, 30 to 35 minutes.\u00c2\u00a0 Transfer the pan to a wire rack to cool completely.\u00c2\u00a0 Lift by the foil from the pan and cut into 24 bar cookies.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2010\/08\/20\/best-blueberry-oatmeal-bars\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Okay, so the title of this recipe is actually BERT&#8217;S Best Blueberry Oatmeal Bars.\u00c2\u00a0 You know, Bert&#8230;.as in Bert and Ernie?\u00c2\u00a0 This recipe is from a Sesame Street cookbook called C is for Cooking: Recipes From the Street.
