href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/06\/30\/minute-to-win-it-party\/\">Minute To Win It Party<\/a> waaaaaaaaaay back in June.\u00c2\u00a0 For dessert, I served these <a href=\"http:\/\/annies-eats.com\/2010\/06\/07\/sugar-cookie-bars\/\">Sugar Cookie Bars from Annie&#8217;s Eats<\/a>.\u00c2\u00a0 Cookie Bars are a great dessert for a crowd, and they are so much easier to throw together than cookies you have to measure or roll out!\u00c2\u00a0 These are thick and cake-like, instead of crunchy like some sugar cookies.\u00c2\u00a0 The lemon zest makes them extra-special.\u00c2\u00a0 Sugar Cookie Bars freeze well too!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/08\/Sugar-Cookie-Bar.jpg\"><img loading=\"lazy\" Bars<\/h4>\n<p>recipe from <a href=\"http:\/\/annies-eats.com\/2010\/06\/07\/sugar-cookie-bars\/\">Annie&#8217;s Eats<\/a><br \/>\nFor the cookie bars:<\/p>\n<ul>\n<li> 1 cup (2 sticks) unsalted butter, at room temperature<\/li>\n<li>2 cups sugar<\/li>\n<li>4 large eggs<\/li>\n<li>2 tsp. vanilla extract<\/li>\n<li>1 vanilla bean, split lengthwise<\/li>\n<li>Zest from 1 lemon<\/li>\n<li>5 cups all-purpose flour<\/li>\n<li>1 tsp. salt<\/li>\n<li>\u00c2\u00bd tsp. baking soda<\/li>\n<\/ul>\n<p>For the frosting:<\/p>\n<ul>\n<li> 1 cup (2 sticks) unsalted butter, at room temperature<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>4 cups confectioners\u00e2\u20ac\u2122 sugar, sifted<\/li>\n<li>5 tbsp. milk<\/li>\n<li>Food coloring, sprinkles (optional)<\/li>\n<\/ul>\n<p>To make the cookies, preheat the oven to 350\u00cb\u0161 F. \u00c2\u00a0 Grease a 13 x 18\u00e2\u20ac\u00b3 rimmed baking sheet <em>(mine was 12 x 17\u00e2\u20ac\u00b3)<\/em>.  \u00c2\u00a0Combine the butter and sugar in the bowl of an electric mixer. \u00c2\u00a0Beat  on medium-high speed until light and smooth, about 2 minutes. \u00c2\u00a0Mix in  the eggs one at a time, beating well after each addition and scraping  down the sides of the bowl as needed. \u00c2\u00a0Blend in the vanilla, seeds from  the vanilla bean, and lemon zest. \u00c2\u00a0In a medium bowl, combine the flour,  salt and baking soda. \u00c2\u00a0Stir together with a fork to blend. \u00c2\u00a0Add the dry  ingredients to the mixer bowl and beat on low speed just until  incorporated.<\/p>\n<p>Transfer the cookie dough to the prepared baking sheet and press into  an even layer. \u00c2\u00a0Bake 10-15 minutes, until light golden brown and a  toothpick inserted in the center comes out clean. \u00c2\u00a0Transfer the pan to a  wire rack and let cool completely before frosting.<\/p>\n<p>To make the frosting, place the butter in the bowl of an electric  mixer. \u00c2\u00a0Beat on medium-high speed until smooth, about 1 minute. \u00c2\u00a0Blend  in the vanilla, salt, and confectioners\u00e2\u20ac\u2122 sugar until smooth, 1-2  minutes. \u00c2\u00a0Mix in the milk. \u00c2\u00a0Tint as desired with food coloring. \u00c2\u00a0Spread  over the cookie in the pan, add sprinkles (if using), cut into bars and serve.<\/p>\n<p><strong>
