Delicious!\u00c2\u00a0 Already looking forward to having the leftovers of this again tomorrow!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/08\/Pasta-with-Chicken-Artichokes-and-Tomatoes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3749\" title=\"Pasta with Chicken Artichokes and Tomatoes\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/08\/Pasta-with-Chicken-Artichokes-and-Tomatoes.jpg\" alt=\"\" width=\"557\" height=\"363\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/08\/Pasta-with-Chicken-Artichokes-and-Tomatoes.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/08\/Pasta-with-Chicken-Artichokes-and-Tomatoes-300x195.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 teaspoons olive oil<\/li>\n<li>2 chicken breasts, pounded to 1\/4&#8243; thickness<\/li>\n<li>2 tablespoons butter<\/li>\n<li>1 teaspoon minced garlic<\/li>\n<li>2 tablespoons cooking sherry (or white wine)<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<li>1 cup cherry tomatoes (halved or quartered)<\/li>\n<li>1\/2 can artichoke hearts, chopped<\/li>\n<li> 1 cup cream (or half and half)<\/li>\n<li>1\/4 cup shredded Parmesan cheese<\/li>\n<li>8 ounces spaghetti noodles, cooked according to package directions<\/li>\n<\/ul>\n<p>Heat oil in a medium skillet.\u00c2\u00a0 While oil is heating, sprinkle chicken breasts on both sides with salt and pepper.\u00c2\u00a0 Cook chicken in skillet for 2-3 minutes on each side or until cooked through.\u00c2\u00a0 Remove chicken from skillet and keep warm.<\/p>\n<p>Add butter to skillet, and melt over medium heat.\u00c2\u00a0 Add garlic to skillet and cook for 30 seconds.\u00c2\u00a0 Next, add sherry, lemon juice, tomatoes and artichokes to skillet, and cook for 5 minutes.<\/p>\n<p>While tomatoes and artichokes are cooking, slice or chop chicken.<\/p>\n<p>Add cream and cheese to skillet, stir until cheese is melted and ingredients are well combined.\u00c2\u00a0 Add chicken back in to sauce and reduce heat to medium-low.\u00c2\u00a0 Cook for an additional 5 minutes, then serve over cooked spaghetti.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2010\/08\/04\/pasta-with-chicken-artichokes-and-tomatoes\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Hmmm.\u00c2\u00a0 The name for this dish needs a little more tweaking (any suggestions?).\u00c2\u00a0 But I wanted to go ahead and share the recipe while it is still fresh in my mind.\u00c2\u00a0 I threw this one together for dinner tonight, using some yellow cherry tomatoes and some of my favorite ingredients (artichokes, creamy sherry garlic sauce&#8230;.yum!).
