{"id":3648,"date":"2010-07-18T12:42:28","date_gmt":"2010-07-18T18:42:28","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=3648"},"modified":"2011-01-19T18:31:23","modified_gmt":"2011-01-20T00:31:23","slug":"spinach-and-ricotta-stuffed-shells","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/07\/18\/spinach-and-ricotta-stuffed-shells\/","title":{"rendered":"Spinach and Ricotta Stuffed Shells"},"content":{"rendered":"<p>I&#8217;ve been in a pasta-cooking rut lately, relying primarily on <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/20\/spaghetti-and-meatballs-with-homemade-red-sauce\/\">Spaghetti and Meatballs<\/a> as my go-to pasta dish.\u00c2\u00a0 I decided to mix it up last week (and make a meat-free meal) with these stuffed shells.\u00c2\u00a0 We really enjoyed, these, especially the homemade Tomato Sauce with Onion and Butter.\u00c2\u00a0 Serve with salad and <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/03\/02\/make-ahead-crisp-buttery-garlic-bread\/\">garlic bread<\/a>, and you&#8217;ve got yourself a great dinner (with lots of leftovers!).<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/07\/Spinach-and-Ricotta-Stuffed-Shells.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3651\" title=\"Spinach and Ricotta Stuffed Shells\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/07\/Spinach-and-Ricotta-Stuffed-Shells.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/07\/Spinach-and-Ricotta-Stuffed-Shells.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/07\/Spinach-and-Ricotta-Stuffed-Shells-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Spinach and Ricotta Stuffed Shells<\/h4>\n<p>adapted from <a href=\"http:\/\/www.realsimple.com\/food-recipes\/browse-all-recipes\/spinach-rocotta-stuffed-shells-recipe-00000000033023\/index.html\">Real Simple, May 2010<br \/>\n<\/a><\/p>\n<p>Serves 6-8<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>20 jumbo pasta shells (about half a 12-ounce box)<\/li>\n<li>1 recipe of <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/02\/28\/tomato-sauce-with-onion-and-butter\/\">Tomato Sauce with Onion and Butter<\/a> (or 24-ounce jar marinara sauce)<\/li>\n<li>1 15 ounce container ricotta<\/li>\n<li>2 cups baby spinach, chopped<\/li>\n<li>1\/2 cup grated Parmesan (2 ounces)<\/li>\n<li>1 teaspoon minced garlic<\/li>\n<li>Kosher salt<\/li>\n<li>black pepper<\/li>\n<li>4 ounces provolone<\/li>\n<\/ul>\n<p>Set an oven rack to the highest position and heat oven to 400 degrees F.\u00c2\u00a0 Cook the pasta according to the package directions;
