{"id":340,"date":"2009-09-21T20:12:29","date_gmt":"2009-09-22T02:12:29","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=340"},"modified":"2009-09-26T15:27:41","modified_gmt":"2009-09-26T21:27:41","slug":"perfect-roast-chicken","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/21\/perfect-roast-chicken\/","title":{"rendered":"Perfect Roast Chicken"},"content":{"rendered":"<p>How is it that I\u00e2\u20ac\u2122ve never roasted a whole chicken before?\u00c2\u00a0 I\u00e2\u20ac\u2122ve roasted 4 or 5 turkeys for holidays, but never a chicken.\u00c2\u00a0 For the past year or so, I have purchased a rotisserie chicken nearly every other week from the grocery store.\u00c2\u00a0\u00c2\u00a0 I guess I thought that buying rotisserie was the easiest thing to do, but it is definitely NOT the cheapest way to go.\u00c2\u00a0 And it turns out that roasting a chicken at home isn\u00e2\u20ac\u2122t that hard, and yields some really flavorful results.\u00c2\u00a0 It only takes about 10 or 15 minutes to prep (and I\u00e2\u20ac\u2122m sure it gets easier with time), so don\u00e2\u20ac\u2122t be intimidated.\u00c2\u00a0 For extra flavor, tuck butter and rosemary between the skin and the meat in addition to filling the cavity.\u00c2\u00a0 You can use the browned bits left in the pan to make a pan sauce, but for now I\u00e2\u20ac\u2122m just keeping it simple!<\/p>\n<p>I served my Roast Chicken with <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/26\/cheesy-scalloped-potatoes\/\">Cheesy Scalloped Potatoes<\/a> and a Spinach Strawberry Salad.\u00c2\u00a0 The next night, I removed all the meat from the chicken bones, used some of it for Chicken Tortilla Soup and froze the rest for future use.\u00c2\u00a0 To stretch this chicken even further, I used the chicken carcass (ew!\u00c2\u00a0 Hate that word!) to make my first ever batch of homemade chicken stock (12 cups!).\u00c2\u00a0\u00c2\u00a0 I\u00e2\u20ac\u2122ll share all these recipes soon.\u00c2\u00a0 That\u00e2\u20ac\u2122s a long way to stretch a chicken!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-341\" title=\"Perfect Roast Chicken\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/09\/Perfect-Roast-Chicken.jpg\" alt=\"Perfect Roast Chicken\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/09\/Perfect-Roast-Chicken.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/09\/Perfect-Roast-Chicken-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Perfect Roast Chicken<\/h4>\n<p>adapted from <a href=\"http:\/\/www.amazon.com\/gp\/product\/0307396444?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0307396444\">Martha Stewart\u00e2\u20ac\u2122s Cooking School<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1      fresh whole chicken (about 4 pounds)<\/li>\n<li>coarse      salt and freshly ground pepper<\/li>\n<li>1      lemon, cut into \u00c2\u00bc inch rounds<\/li>\n<li>4      sprigs rosemary<\/li>\n<li>3      garlic cloves, crushed<\/li>\n<li>2      tablespoons unsalted butter, room temperature<\/li>\n<\/ul>\n<p>Prepare Chicken: Heat oven to 450 degrees F.\u00c2\u00a0 Remove giblets and liver from cavity;
