{"id":3312,"date":"2010-06-07T20:39:01","date_gmt":"2010-06-08T02:39:01","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=3312"},"modified":"2010-06-07T20:39:01","modified_gmt":"2010-06-08T02:39:01","slug":"chicken-and-spinach-alfredo-pizza-with-garlic-rosemary-foccacia-crust","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/06\/07\/chicken-and-spinach-alfredo-pizza-with-garlic-rosemary-foccacia-crust\/","title":{"rendered":"Chicken and Spinach Alfredo Pizza with Garlic Rosemary Foccacia Crust"},"content":{"rendered":"<p>Yet another long (albeit descriptive) recipe title.\u00c2\u00a0 This is such a delicious homemade pizza, and the crust really takes it up a notch from <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/01\/19\/self-rising-pizza-crust\/\">a regular pizza crust<\/a>.\u00c2\u00a0 This makes enough dough for two thinner crusts or one thicker crust.\u00c2\u00a0 I prefer thick, The Picky Apple prefers thin.\u00c2\u00a0 So far, I&#8217;ve been the winner of that little battle, but next time I&#8217;ll make thin crust for The Picky Apple.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/06\/Chicken-Alfredo-Pizza.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3319\" title=\"Chicken Alfredo Pizza\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/06\/Chicken-Alfredo-Pizza.jpg\" alt=\"\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/06\/Chicken-Alfredo-Pizza.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/06\/Chicken-Alfredo-Pizza-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/a><\/p>\n<h4>Chicken and Spinach Alfredo Pizza with Garlic Rosemary Foccacia Crust<\/h4>\n<p>For the crust:<\/p>\n<ul>\n<li>1 package (or 2 1\/4 teaspoons) active dry yeast<\/li>\n<li>1 cup warm water<\/li>\n<li>3 cups flour, divided<\/li>\n<li>1\/4 cup olive oil<\/li>\n<li>2 tablespoons chopped fresh rosemary<\/li>\n<li>1 1\/2 teaspoons salt<\/li>\n<li>2 teaspoons chopped garlic<\/li>\n<\/ul>\n<p>For the Alfredo sauce:<\/p>\n<ul>\n<li> 4 tablespoons butter<\/li>\n<li> 1\/4 teaspoon salt<\/li>\n<li> 1 dash ground black pepper<\/li>\n<li> 4 tablespoons all-purpose flour<\/li>\n<li> 1 cup milk<\/li>\n<li> 3\/4 cup grated Romano cheese (I&#8217;ve also used Parmesan and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Cotija_cheese\">Cotija<\/a> cheese)<\/li>\n<\/ul>\n<p>Other toppings:<\/p>\n<ul>\n<li>Chopped rotisserie or leftover <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/21\/perfect-roast-chicken\/\">Perfect Roast Chicken<\/a><\/li>\n<li>1 1\/2 cups fresh spinach<\/li>\n<li>1 tablespoon fresh chopped rosemary<\/li>\n<li>Peppers, mushrooms, onions, tomatoes, Parmesan cheese (optional)<\/li>\n<\/ul>\n<p>To make the crust: Combine yeast and water; let stand 5 minutes. Whisk in the olive oil and salt. Stir 2 cups flour, garlic, and rosemary in a large bowl; make a well in the center. Add yeast mixture; stir until a soft dough forms. Cover and let rise in a warm place for 50 minutes.\u00c2\u00a0 Add remaining 1 cup flour and knead until flour is incorporated into dough. Knead until smooth and elastic, about 5 minutes.\u00c2\u00a0\u00c2\u00a0 Let rise in a warm place for 35 minutes.\u00c2\u00a0 Preheat oven to 450 degrees F with a pizza stone on a rack in the top 1\/2 of the oven.<\/p>\n<p>Divide dough in half, if you&#8217;re making the thin crust version.\u00c2\u00a0 On a floured surface, roll each portion out into rounds just under 1\/2 an inch thick.<\/p>\n<p>To make the Alfredo sauce:\u00c2\u00a0 Melt butter in a small saucepan over medium heat. Blend in salt, pepper and flour, then stir in the milk and cheese. Simmer, stirring constantly, until thickened.
