{"id":3138,"date":"2010-05-22T14:11:55","date_gmt":"2010-05-22T20:11:55","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=3138"},"modified":"2010-05-22T14:11:55","modified_gmt":"2010-05-22T20:11:55","slug":"baked-chicken-bacon-alfredo","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/05\/22\/baked-chicken-bacon-alfredo\/","title":{"rendered":"Baked Chicken Bacon Alfredo"},"content":{"rendered":"<p>I thought this dish would be a perfect fit for my chicken alfredo and bacon loving Picky Apple, and I was drawn to it because of the homemade alfredo recipe and artichokes.\u00c2\u00a0 It&#8217;s freezer friendly, so make a big batch and freeze some for later!\u00c2\u00a0 I&#8217;ll admit that this recipe is deceptively simple.\u00c2\u00a0 I made it more complicated than it needed to be since I didn&#8217;t have my chicken cooked ahead of time.\u00c2\u00a0 I pan sauteed some chicken with olive oil, lemon juice, garlic and oregano to use in this recipe.\u00c2\u00a0 The homemade alfredo sauce does add some extra steps, but it is SO worth it.\u00c2\u00a0 This sauce is delicious even by itself.\u00c2\u00a0 Add to that some chicken, bacon, and artichokes, and you&#8217;ve got one yummy pasta dish!<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3141\" title=\"Baked Chicken Bacon Alfredo\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Baked-Chicken-Bacon-Alfredo.jpg\" alt=\"Baked Chicken Bacon Alfredo\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Baked-Chicken-Bacon-Alfredo.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Baked-Chicken-Bacon-Alfredo-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/h4>\n<h4>Baked Chicken Bacon Alfredo<\/h4>\n<p>from <a href=\"http:\/\/www.ourbestbites.com\/2010\/04\/baked-chicken-bacon-alfredo.html\">Our Best Bites<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>8 oz. <span>penne<\/span> or <span>bowtie pasta<\/span><strong><strong> <\/strong><\/strong><\/li>\n<li>1 recipe Guiltless Alfredo Sauce (see recipe below, or use 1 16-oz. jar)<\/li>\n<li>2 chicken breasts, grilled and chopped (about 2 c. chopped chicken)<\/li>\n<li>6 oz. (1\/2 package) cooked bacon, chopped<\/li>\n<li>1 14-oz. jar marinated artichoke hearts, drained and chopped<\/li>\n<li>1\/2 c. chopped green onions (about 1 decent-sized bunch)<\/li>\n<li>1 c. shredded mozzarella cheese, divided<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<div>Preheat oven to 350.\u00c2\u00a0 Prepare pasta according to package directions.\u00c2\u00a0 While pasta is cooking, prepare Guiltless<strong> <\/strong> Alfredo Sauce. When pasta is done, drain and add to the sauce. Toss with chopped chicken, bacon, artichoke hearts, green onions, and 1\/2 c. mozzarella. Season to taste.\u00c2\u00a0 Transfer mixture to an 8&#215;8&#8243; baking dish and sprinkle with remaining 1\/2 c. mozzarella cheese. Cover with aluminum foil and bake at 350 for 20 minutes or until heated through and cheese is bubbly.<\/div>\n<h4>Guiltless Alfredo Sauce<\/h4>\n<p>from <a href=\"http:\/\/www.ourbestbites.com\/2008\/08\/guiltless-alfredo-sauce.html\">Our Best Bites<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 C low-fat milk (not skim)<\/li>\n<li>1\/3 C (3 oz) 1\/3-less-fat cream cheese<\/li>\n<li>2 T flour<\/li>\n<li>1 t salt<\/li>\n<li>1 T butter<\/li>\n<li>3 garlic cloves<\/li>\n<li>1 C grated Parmesan cheese<\/li>\n<\/ul>\n<p>Toss the milk, cream cheese, flour, and salt in a blender.\u00c2\u00a0 Process until smooth and set aside.<\/p>\n<p>In a non-stick sauce pan, melt butter on med-high heat and add garlic.\u00c2\u00a0 Let the garlic saute for about 30 seconds, you don&#8217;t want to burn it. It should be nice and bubbly.<span style=\"font-family: trebuchet ms;\"> <\/span>Then add milk mixture to the pan. Stir constantly for about 3 or 4 minutes or until it just comes to a simmer. Keep stirring and let it cook for a few minutes more. It should be much thicker now.<\/p>\n<p>When it&#8217;s nice and thick (it should look as thick as a normal alfredo sauce) remove the pan from the heat. Add the cheese, stir it up and then cover immediately. Let stand for at least 10 minutes before using. It will continue to thicken upon standing. Also, if you have leftovers in the fridge, the sauce will thicken almost into a solid.
