The title doesn&#8217;t exactly leave much to the imagination, but <em>I<\/em> didn&#8217;t make it up.\u00c2\u00a0 <em>Jamie and Bobby<\/em> did.\u00c2\u00a0 This is a recipe from the Deen boys&#8217; cookbook, <a href=\"ttp:\/\/www.amazon.com\/gp\/product\/0345513266?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0345513266\">The Deen Bros. Take it Easy<\/a>.\u00c2\u00a0 I loved this simple meal!\u00c2\u00a0 It was my first time using orzo, which provided a nice contrast to the the crunchy pine nuts.\u00c2\u00a0\u00c2\u00a0 I absolutely loved all of the flavors of this dish, along with the simple dressing.\u00c2\u00a0 This makes a great dish for lunch or a light dinner, and would be perfect to bring to a potluck or BBQ.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3044\" title=\"Mediterranean Orzo Salad\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Mediterranean-Orzo-Salad.jpg\" alt=\"Mediterranean Orzo Salad\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Mediterranean-Orzo-Salad.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Mediterranean-Orzo-Salad-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Mediterranean Chicken and Orzo Salad With Sun-dried Tomatoes and Pine Nuts<\/h4>\n<p>from The Houston Chronicle, September 16, 2009<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>8 ounces (1 1\/2 cups) orzo<\/li>\n<li>1 cup diced cooked chicken <em>(I used leftovers from <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/21\/perfect-roast-chicken\/\">Perfect Roast Chicken<\/a>)<\/em><\/li>\n<li>1\/2 cup chopped oil-packed sun-dried tomatoes, drained<\/li>\n<li>1\/2 cup chopped fresh basil <em>(fresh from <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/04\/21\/spring-2010-garden\/\">our garden<\/a>)<\/em><\/li>\n<li>1\/2 cup chopped pitted kalamata olives<\/li>\n<li>1\/4 cup toasted pine nuts<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 1\/2 teaspoons freshly squeezed lemon juice<\/li>\n<li>1 garlic clove, finely chopped<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/2 teaspoon freshly ground black pepper<\/li>\n<li>4 cups (about 3 ounces) crisp greens, such as romaine or Boston lettuce, for serving <em>(I substituted spinach)<\/em><\/li>\n<\/ul>\n<p>Bring a large pot of salted water to a boil.\u00c2\u00a0 Cook orzo according to package directions.\u00c2\u00a0 Drain well.\u00c2\u00a0 In a large bowl, combine orzo with chicken, sun-dried tomatoes, basil, olives and pine nuts.\u00c2\u00a0 To make the dressing: in a small bowl, whisk together the olive oil, lemon juice, garlic, salt and pepper.\u00c2\u00a0 Pour the dressing over the salad and toss to combine.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2010\/05\/07\/mediterranean-chicken-and-orzo-salad-with-sun-dried-tomatoes-and-pine-nuts\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Longest recipe title ever, isn&#8217;t it?
