{"id":2987,"date":"2010-05-01T18:08:47","date_gmt":"2010-05-02T00:08:47","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=2987"},"modified":"2010-05-06T13:50:47","modified_gmt":"2010-05-06T19:50:47","slug":"cheesy-zucchini","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/05\/01\/cheesy-zucchini\/","title":{"rendered":"Cheesy Zucchini"},"content":{"rendered":"<p>I love, love LOVE this zucchini recipe!\u00c2\u00a0 I served it with <a href=\"https:\/\/www.thepickyapple.com\/blog\/\">Spicy Fish<\/a> for an extra delicious meal.\u00c2\u00a0 I&#8217;m adding more veggies to our dinners, but we&#8217;re taking baby steps.\u00c2\u00a0 This recipe has quite a bit of cheese, but it could be cut back with equally delicious results.<\/p>\n<p>You know what I learned though?\u00c2\u00a0 The Picky Apple <em>hates<\/em> zucchini.\u00c2\u00a0 Even zucchini cooked up with garlic and cheese.\u00c2\u00a0 He finds the texture slimy and the taste yucky.\u00c2\u00a0 Is there any doubt about where The Littlest Apple got<a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/10\/13\/the-pickiest-of-picky\/\"> his picky eating habits<\/a>?!\u00c2\u00a0 But this zucchini is so delicious that I won&#8217;t mind cooking it up just for me!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2991\" title=\"Cheesy Zucchini\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Cheesy-Zucchini.jpg\" alt=\"Cheesy Zucchini\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Cheesy-Zucchini.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Cheesy-Zucchini-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Cheesy Zucchini<\/h4>\n<p>from <a href=\"http:\/\/www.amazon.com\/gp\/product\/0761138994?ie=UTF8&amp;tag=thepicapp-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0761138994\">Food to Live By: The Earthbound Farm Organic Cookbook<\/a>, by Myra Goodman<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 tablespoons extra-virgin olive oil<\/li>\n<li>4 large cloves garlic, thinly sliced<\/li>\n<li>1 1\/2 pounds medium-size zucchini or other summer swash, cut in 1\/2 inch-thick slices (about 4 cups)<\/li>\n<li>2 tablespoons coarsely chopped fresh flat-leaf parsley <em>(omitted)<\/em><\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/3 cup freshly grated Parmesan cheese<\/li>\n<li>1\/2 cup freshly grated mozzarella cheese<\/li>\n<\/ul>\n<p>Heat the olive oil in a large nonstick skillet over medium heat.\u00c2\u00a0 Add the garlic and cook, stirring frequently until softened, 1 to 2 minutes.<\/p>\n<p>Add the squash and stir to coat with the garlic-oil mixture.\u00c2\u00a0 Cover the skillet <em>(Picky Apple Note: I left mine uncovered)<\/em> and cook the squash, stirring occasionally, until it is glossy and crisp-tender, 4 to 6 minutes.<\/p>\n<p>Sprinkle the parsley and salt evenly over the squash and cook, stirring frequently, until the parsley wilts, about 1 minute longer.\u00c2\u00a0 Stir in the Parmesan cheese and stir constantly until it melts, about 1 minute.<\/p>\n<p>Sprinkle the mozzarella cheese evenly over the squash, cover the skillet again, and remove it from the heat.\u00c2\u00a0 Let the squash sit until the mozzarella cheese melts, 1 to 2 minutes.\u00c2\u00a0 Serve immediately.<\/p>\n<p><a href=\"http:\/\/lifeasmom.com\/2010\/05\/ultimate-recipe-swap-oven-roasted-asparagus-and-other-veggie-recipes.html\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3033\" title=\"Ultimate Recipe Swap\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/05\/Ultimate-Recipe-Swap.jpg\" alt=\"Ultimate Recipe Swap\" width=\"300\" height=\"118\" \/><\/a><\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2010\/05\/01\/cheesy-zucchini\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>I love, love LOVE this zucchini recipe!\u00c2\u00a0 I served it with Spicy Fish for an extra delicious meal.\u00c2\u00a0 I&#8217;m adding more veggies to our dinners, but we&#8217;re taking baby steps.\u00c2\u00a0 This recipe has quite a bit of cheese, but it could be cut back with equally delicious results.
