{"id":2792,"date":"2010-04-10T19:24:48","date_gmt":"2010-04-11T01:24:48","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=2792"},"modified":"2010-04-10T19:24:48","modified_gmt":"2010-04-11T01:24:48","slug":"chicken-poppy-seed-salad","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/04\/10\/chicken-poppy-seed-salad\/","title":{"rendered":"Chicken Poppy Seed Salad"},"content":{"rendered":"<p>This is one of the best salads I&#8217;ve ever had.\u00c2\u00a0 It is certainly the best salad I&#8217;ve ever created at home.\u00c2\u00a0 All of the components to this salad taste great on their own, but toss them all together, and you&#8217;ve got an out-of-this-world salad.\u00c2\u00a0 The dressing is phenomenal!\u00c2\u00a0 I plan to start making this dressing regularly instead of buying a store bought red wine vinaigrette.\u00c2\u00a0 The grilled chicken has amazing flavor (and I plan to serve this chicken on its own for dinner sometime soon).\u00c2\u00a0 The sugared almonds are so simple to make, but add a great sweet crunch to the salad.\u00c2\u00a0 It was a huge hit at Easter Brunch-many people went back for seconds-but it would also make a great main dish.\u00c2\u00a0 I&#8217;ve got it on the dinner menu for next week!<\/p>\n<p><em>Now if I could just figure out how to duplicate the Chopped Asian Salad from <a href=\"http:\/\/www.benjys.com\/flash.html\">benjy&#8217;s<\/a>, I&#8217;d be in salad heaven!<\/em><\/p>\n<p><em><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2795\" title=\"Chicken Poppy Seed Salad\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/04\/Chicken-Poppy-Seed-Salad.jpg\" alt=\"Chicken Poppy Seed Salad\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/04\/Chicken-Poppy-Seed-Salad.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/04\/Chicken-Poppy-Seed-Salad-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><br \/>\n<\/em><\/p>\n<h4>Chicken Poppy Seed Salad<span style=\"font-size: 10px;\"> <\/span><strong> <\/strong><\/h4>\n<div>from <a href=\"http:\/\/sisterscafe.blogspot.com\/2010\/03\/favorites-friday-chicken-poppy-seed.html\">The Sisters Cafe<\/a><\/div>\n<div>Ingredients:<\/div>\n<div>\n<ul>\n<li>Spinach leaves<\/li>\n<li>Romaine leaves<\/li>\n<li>Lemon Grilled chicken, sliced <em>(recipe below, or grill with lemon pepper seasoning)<\/em><\/li>\n<li>Red onion, sliced thinly <em>(omitted)<\/em><\/li>\n<li>Crispy bacon, crumbled<\/li>\n<li>Shredded mozzarella cheese<\/li>\n<li>Sugared almonds (Put sliced or chopped almonds in a pan with lots of granulated sugar (about equal amounts). Cook on medium heat until sugar melts, coating the almonds as they brown.)<\/li>\n<li>Poppy seed dressing <em>(recipe below)<\/em><\/li>\n<\/ul>\n<\/div>\n<h4>Lemon Grilled Chicken<\/h4>\n<div>Ingredients:<\/div>\n<div>\n<ul>\n<li>Juice of one lemon (~3 Tb lemon juice)<\/li>\n<li>3 Tb oil<\/li>\n<li>1 tsp minced garlic (~2 large cloves)<\/li>\n<li>1 tsp salt<\/li>\n<li>1\/4 tsp pepper<\/li>\n<li>1\/2 tsp oregano<\/li>\n<li>1 lb chicken breasts<\/li>\n<\/ul>\n<\/div>\n<div>Marinate the chicken overnight. \u00c2\u00a0For salad, dice the raw chicken and marinate it that way so there is more surface area to marinate. \u00c2\u00a0You can get away with marinating for a shorter amount of time this way. Grilling is best, but cooking in a skillet is great, too.<\/div>\n<div><span style=\"font-family: 'Trebuchet MS',Trebuchet,Verdana,sans-serif; font-size: small;\"><span style=\"font-size: 13px; line-height: 20px;\"><br \/>\n<\/span><\/span><\/p>\n<h4>Poppy Seed Dressing<strong><span style=\"font-size: 17px;\"> <\/span><\/strong><\/h4>\n<div><strong><span style=\"font-size: 17px;\"> <\/span><\/strong>Ingredients:<\/p>\n<ul>\n<li> 1 1\/3 cup sugar<\/li>\n<li>2 tsp salt<\/li>\n<li>2 tsp dry mustard<\/li>\n<li>2\/3 cup red wine vinegar<\/li>\n<li>3 Tb Maui or\u00c2\u00a0<span id=\"SPELLING_ERROR_0\">Vidalia<\/span> onion, chopped<\/li>\n<li>2 cups canola oil<\/li>\n<li>3 Tb poppy seeds<\/li>\n<\/ul>\n<\/div>\n<div>Mix the first 5 ingredients in a blender, then slowly add the oil, blending until thick. Stir in poppy seeds.
