{"id":2782,"date":"2010-04-09T20:51:55","date_gmt":"2010-04-10T02:51:55","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=2782"},"modified":"2010-04-09T20:51:55","modified_gmt":"2010-04-10T02:51:55","slug":"lemon-blueberry-crumb-bundt-cake","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/04\/09\/lemon-blueberry-crumb-bundt-cake\/","title":{"rendered":"Lemon Blueberry Crumb Bundt Cake"},"content":{"rendered":"<p>This cake is delicious!\u00c2\u00a0 It tastes like spring.\u00c2\u00a0 Lemony fresh.\u00c2\u00a0 Blueberries.\u00c2\u00a0 Those things alone make this cake fantastic, but the crumb layer (on the bottom) takes it a step beyond.\u00c2\u00a0 This is one of my new favorites!\u00c2\u00a0 Sorry I don&#8217;t have a better photo of this.\u00c2\u00a0 It was a mad dash to get photos of all the food before Easter brunch started.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2785\" title=\"Lemon Blueberry Crumb Bundt Cake\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/04\/Lemon-Blueberry-Crumb-Bundt-Cake.jpg\" alt=\"Lemon Blueberry Crumb Bundt Cake\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/04\/Lemon-Blueberry-Crumb-Bundt-Cake.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/04\/Lemon-Blueberry-Crumb-Bundt-Cake-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Lemon Blueberry Crumb Bundt Cake<\/h4>\n<p>adapted from <a href=\"http:\/\/onehungrymama.com\/2010\/03\/make-ahead-brunch-for-company-part-3-of-3-lemon-blueberry-crumb-bundt-cake\/\">One Hungry Mama<\/a> who adapted from <a href=\"http:\/\/www.marthastewart.com\/recipe\/blueberry-lemon-bundt-cake\">Martha Stewart<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 1\/2 c flour, plus 1 tsp for blueberries and zest<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 c (2 sticks) unsalted butter, room temp<\/li>\n<li>1 c packed light brown sugar<\/li>\n<li>1 c granulated sugar<\/li>\n<li>4 large eggs<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 c sour cream<\/li>\n<li>2 c blueberries<\/li>\n<li>2 tbsp grated lemon zest<\/li>\n<li>nonstick cooking spray, for pan<br \/>\n<strong> <\/strong><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong> <\/strong><\/span>For the crumble:<\/p>\n<ul>\n<li> 5 tbsp cold butter, cubed<\/li>\n<li>3\/4 c flour<\/li>\n<li>1 c light brown sugar<\/li>\n<li>2 tsp cinnamon<\/li>\n<li>1\/4 tsp salt<\/li>\n<\/ul>\n<p>For the glaze:<span style=\"text-decoration: underline;\"><strong> <\/strong><\/span><\/p>\n<ul>\n<li> 1\/2 cup confectioners\u00e2\u20ac\u2122 sugar<\/li>\n<li>1\/2 c freshly squeezed lemon juice<\/li>\n<\/ul>\n<p>Preheat oven to 350 degrees. In a bowl, whisk 2 1\/2 cups flour with baking powder and salt; set aside.<\/p>\n<p>In a mixing bowl, cream butter and sugars on high speed until light and fluffy. Add eggs, one at a time, beating until incorporated. Beat in vanilla. Reduce speed to low; add flour mixture in three additions, alternating with two additions of sour cream.<\/p>\n<p>In a bowl, toss blueberries and zest with remaining teaspoon flour; gently fold into batter. Coat a 12-cup nonstick Bundt pan with cooking spray. Spread batter in prepared pan and set aside.<\/p>\n<p>Prep the crumb topping: pulse brown sugar, flour, cinnamon and cold butter in a food processor until crumbly. Spread topping evenly over the batter, gently pressing down.\u00c2\u00a0Bake cake until a toothpick inserted into the center of the cake comes out clean, about 60 minutes. Cool in pan for 15 minutes before inverting onto a rack.<\/p>\n<p>While the cake is cooling, prepare the glaze: in a small saucepan, whisk together confectioners\u00e2\u20ac\u2122 sugar and lemon juice over very low heat until smooth and warmed through.<\/p>\n<p>Using a toothpick, poke holes over the top of your bundt cake and pour warm glaze evenly over it.
