Pickled Shrimp"},"content":{"rendered":"<p>Are you tired of the Easter recipes yet?\u00c2\u00a0 I am, but I&#8217;ve got just a few more to share.\u00c2\u00a0 Then I&#8217;ll blog about something besides food!\u00c2\u00a0 For <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/04\/03\/easter-brunch-2010\/\">Easter Brunch<\/a> I really wanted to have shrimp, even though (A) there was already way too much food and (B) only about half the guests like shrimp.\u00c2\u00a0 Not much of it got eaten, but my dad and I both liked it.\u00c2\u00a0 It&#8217;s a little more work than just plopping down a platter of shrimp cocktail, but it also has a little more kick to it.\u00c2\u00a0 Don&#8217;t forget to plan ahead on this one: the shrimp needs to chill in the marinade overnight or up to one day!\u00c2\u00a0 In the magazine photo, it was served in a giant hurricane glass, with a lemon slice on the rim.<\/p>\n<p><em>Note on the recipe:\u00c2\u00a0 Don&#8217;t you just hate it when the recipe is on two pages, and those pages get separated from one another?\u00c2\u00a0 That&#8217;s what happened to me with this recipe.\u00c2\u00a0 I actually only have the ingredients list.\u00c2\u00a0 I just guessed at the actual directions.\u00c2\u00a0 I&#8217;m sharing my method below.<\/em><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full Shrimp<\/h4>\n<p>from Southern Living, March 2010<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 lb. peeled cooked shrimp (26\/30 count)<\/li>\n<li>3 small white onions, thinly sliced<\/li>\n<li>1\/2 cup olive oil<\/li>\n<li>1\/4 cup tarragon vinegar <em>(I just used plain old white vinegar)<\/em><\/li>\n<li>2 tbsp pickling spices<\/li>\n<li>2 tsp salt<\/li>\n<li>1 tsp sugar<\/li>\n<li>1 tsp Worcestershire sauce<\/li>\n<li>1\/2 tsp dry mustard<\/li>\n<li>1\/4 tsp ground red pepper<\/li>\n<li>1\/4 cup chopped fresh parsley <em>(omitted)<\/em><\/li>\n<\/ul>\n<p>Combine onions, olive oil, vinegar, pickling spices, salt, sugar, Worcestershire, mustard, and pepper in a large bowl.\u00c2\u00a0 Add shrimp.\u00c2\u00a0 Cover and chill for up to 1 day, stirring occasionally.\u00c2\u00a0
