Pecan Granola"},"content":{"rendered":"<p>Greek yogurt and granola is one of my favorite snacks.\u00c2\u00a0 I got a little burnt out on granola after making <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/23\/pumpkin-spice-granola\/\">Pumpkin Spice Granola<\/a> many, many times last fall, so I took a little break.\u00c2\u00a0 I switched to <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/03\/18\/strawberry-banana-smoothie\/\">smoothies<\/a> instead.\u00c2\u00a0 But now I&#8217;m getting tired of smoothies, so it&#8217;s back to granola.\u00c2\u00a0 I love the ginger and pecans of this granola, combined with the sweetness of the dried cranberries.\u00c2\u00a0 It makes a delicious breakfast, snack, or dessert!<\/p>\n<p><img Granola<\/h4>\n<p>from The Houston Chronicle, December 16, 2009<\/p>\n<p>Makes 10 cups <em>(I halved the recipe, and had plenty for a couple of weeks!)<\/em><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>Nonstick cooking spray<\/li>\n<li>6 cups whole oats<\/li>\n<li>2 1\/2 cups unsalted pecans<\/li>\n<li>1\/2 cup ground flax or flax meal (optional)<\/li>\n<li>3\/4 cup pure maple syrup<\/li>\n<li>3\/4 cup firmly packed light brown sugar<\/li>\n<li>1\/3 cup canola oil <em>(I used coconut oil)<\/em><\/li>\n<li>1\/3 cup water<\/li>\n<li>1 teaspoon kosher salt<\/li>\n<li>1 tablespoon finely chopped fresh ginger<\/li>\n<li>2 cups dried cranberries<\/li>\n<\/ul>\n<p>Preheat oven to 275 degrees F.\u00c2\u00a0 Coat two baking sheets with non-stick cooking spray.\u00c2\u00a0 In a large bowl, mix together oats, pecans, and flax.\u00c2\u00a0 In a medium bowl, whisk together syrup, brown sugar, oil, water, salt and ginger.\u00c2\u00a0 Pour liquid over oats and stir until evenly coated.<\/p>\n<p>Distribute granola on baking sheets and bake until it is a rich brown color, about 1\u00c2\u00a0 to 1 1\/4 hours.\u00c2\u00a0 Turn pans during baking if granola is not cooking evenly.\u00c2\u00a0 Remove from oven, pour into a large bowl and toss with dried cranberries.\u00c2\u00a0 Let cook before storing in an airtight
