Pecan Muffins"},"content":{"rendered":"<p>We&#8217;ve still got quite a few months left of the sweltering Houston heat, and I am craving fall <em>big time<\/em>.\u00c2\u00a0 The cooler weather.\u00c2\u00a0 The start of school (The Littlest Apple will be attending preschool 2 days a week.\u00c2\u00a0 Hooray for mommy!).\u00c2\u00a0 The excitement in the air during football season.\u00c2\u00a0 The beautiful colors of fall that fit in so nicely with my home decor (such as it is).\u00c2\u00a0 Lastly, the FOOD of fall!\u00c2\u00a0 Pumpkin, anyone?<\/p>\n<p>This recipe is just one of many from Food To Live By, by Myra Goodman (founder of <a href=\"http:\/\/www.ebfarm.com\/\">Earthbound Farm Organic<\/a>)\u00c2\u00a0 that I&#8217;ve tried recently.\u00c2\u00a0 Other recipes I&#8217;ve tried include Farm Stand Meatballs, Grilled Tahini Chicken with Eggplant and Mushrooms over Soba Noodles, Marinara Sauce with Pancetta, and Spaghetti Bolognese.\u00c2\u00a0 All were delicious, and I can&#8217;t wait to try some of the soups, salads, and side dishes.\u00c2\u00a0 This is one of my new favorite cookbooks.\u00c2\u00a0 Wholesome recipes, tons of gorgeous photographs, and a special emphasis on organic, farm fresh ingredients.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-267\" title=\"Food_to_Live_By_only\" Muffins<\/h4>\n<p>from <a href=\"http:\/\/www.amazon.com\/Food-Live-Earthbound-Organic-Cookbook\/dp\/0761138994\/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1248144539&amp;sr=8-1\">Food to Live By: The Earthbound Farm Organic Cookbook<\/a> by Myra Goodman<\/p>\n<p>Makes 15 standard-size muffins<\/p>\n<p>Ingredients:<\/p>\n<p>For the topping:<\/p>\n<ul>\n<li>1\/3 cup unbleached all-purpose flour<\/li>\n<li>1\/3 cup packed light brown sugar<\/li>\n<li>1\/4 teaspoon ground cinnamon<\/li>\n<li>4 tablespoons (1\/2 stick) cold, unsalted butter, cut into small pieces<\/li>\n<\/ul>\n<p>For the muffins:<\/p>\n<ul>\n<li>Butter, for greasing the muffin cups<\/li>\n<li>1 2\/3 cups unbleached all-purpose flour<\/li>\n<li>1 tablespoon baking soda<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 teaspoon ground allspice<\/li>\n<li>1\/2 teaspoon ground nutmeg<\/li>\n<li>1\/2 teaspoon ground cardamom<\/li>\n<li>1\/2 teaspoon ground cinnamon<\/li>\n<li>3\/4 cup chopped pecans<\/li>\n<li>3 large eggs<\/li>\n<li>4 tablespoons (1\/2 stick) unsalted butter, melted<\/li>\n<li>2 teaspoons grated orange zest<\/li>\n<li>1 can (15 ounces) pumpkin puree<\/li>\n<li>1 1\/2 cups granulated sugar<\/li>\n<\/ul>\n<p>Position a rack in the lower third of the oven and preheat the oven to 375 degrees F.<\/p>\n<p>Make the topping.\u00c2\u00a0 Place the flour, brown sugar, and cinnamon in a medium size bowl and stir to combine.\u00c2\u00a0 Add the butter pieces.\u00c2\u00a0 Using a pastry blender, 2 knives, or your fingers, blend the butter into the topping until it is crumbly and well combined.\u00c2\u00a0 Set the topping aside.<\/p>\n<p>Make the muffins: Butter 15 standard size muffin cups or line them with cupcake liners.<\/p>\n<p>Place the flour, baking soda, salt, allspice, nutmeg, cardamom, and cinnamon in a large bowl and whisk to combine well.\u00c2\u00a0 Add the pecans and stir to combine.<\/p>\n<p>Place the eggs, melted butter, orange zest, pumpkin, and granulated sugar in a medium sized bowl and whisk to combine well.<\/p>\n<p>Add the pumpkin mixture to the flour mixture and stir with a rubber spatula until just combined.\u00c2\u00a0 Do not overmix the batter or the muffins will be tough.\u00c2\u00a0 Spoon the batter into the prepared muffin cups, filling them almost to the brim.\u00c2\u00a0 Sprinkle the top of each muffin with about 2 teaspoons of the topping.<\/p>\n<p>Bake the muffins until they are golden brown and a toothpick inserted into the center of one comes out clean, 20 to 30 minutes.<\/p>\n<p>Place the muffin pan(s) on a wire rack and let hte muffins cool for 10 minutes.\u00c2\u00a0 Remove the muffins from the pan and serve warm.\u00c2\u00a0 The muffins taste best the day they are made.\u00c2\u00a0 If necessary, you can store them in an airtight container for up to 3 days and reheat them in a microwave for 10 seconds or in a preheated 350 degrees F oven for 5 to 10 minutes.<\/p>\n<div class=\"linkwithin_hook\"
