{"id":2314,"date":"2010-02-28T09:09:49","date_gmt":"2010-02-28T15:09:49","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=2314"},"modified":"2010-02-28T09:14:48","modified_gmt":"2010-02-28T15:14:48","slug":"tomato-sauce-with-onion-and-butter","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/02\/28\/tomato-sauce-with-onion-and-butter\/","title":{"rendered":"Tomato Sauce with Onion and Butter"},"content":{"rendered":"<p>I thought that I had homemade red sauce all figured out.\u00c2\u00a0 After all, I&#8217;ve been making my own for a couple of years now, always following <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/02\/20\/spaghetti-and-meatballs-with-homemade-red-sauce\/\">the same recipe<\/a>.\u00c2\u00a0 It wasn&#8217;t a difficult recipe.\u00c2\u00a0 A few cans of tomato, add spices, garlic, cheese.\u00c2\u00a0 Then I happened across <a href=\"http:\/\/smittenkitchen.com\/2010\/01\/tomato-sauce-with-butter-and-onions\/\">this recipe for Tomato Sauce<\/a> on <a href=\"http:\/\/smittenkitchen.com\/\">Smitten Kitchen<\/a>.\u00c2\u00a0\u00c2\u00a0 Apparently it is a recipe that many a famous food blogger has swooned over.\u00c2\u00a0 As such, I figured it had to be complicated.\u00c2\u00a0 Imagine my surprise when I saw a mere FOUR ingredients listed!\u00c2\u00a0 Tomatoes (duh!).\u00c2\u00a0 Butter (always a good addition!).\u00c2\u00a0 Onion (that gets removed later, perfect!).\u00c2\u00a0 Salt.\u00c2\u00a0 <em>That&#8217;s it<\/em>.\u00c2\u00a0 I&#8217;ll be honest.\u00c2\u00a0 I was more than a little skeptical.\u00c2\u00a0 Where were all the spices and secret ingredients?\u00c2\u00a0 Don&#8217;t you need to add some oregano or basil to have a good red sauce?\u00c2\u00a0 Apparently not.\u00c2\u00a0 I simmered up a pot of this sauce this week to go along with spaghetti and meatballs, and it was DELICIOUS!\u00c2\u00a0 This sauce tastes amazing on its own, no meatballs necessary.\u00c2\u00a0 It can be served up with spaghetti, plain and simple.\u00c2\u00a0 Next time you need red sauce, please try this recipe instead of reaching for a jar of sauce, won&#8217;t you?\u00c2\u00a0 I had trouble getting a decent photo of the plain sauce, but here it is simmering with the meatballs:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2315\" title=\"Tomato Sauce with Onion and Butter\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/02\/Tomato-Sauce-with-Onion-and-Butter.jpg\" alt=\"Tomato Sauce with Onion and Butter\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/02\/Tomato-Sauce-with-Onion-and-Butter.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2010\/02\/Tomato-Sauce-with-Onion-and-Butter-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Tomato Sauce with Onion and Butter<\/h4>\n<p>from <a href=\"http:\/\/smittenkitchen.com\/2010\/01\/tomato-sauce-with-butter-and-onions\/\">Smitten Kitchen<\/a>, adapted from Marcela Hazan\u00e2\u20ac\u2122s <a href=\"http:\/\/www.amazon.com\/gp\/product\/039458404X?ie=UTF8&amp;tag=smitten-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=039458404X\">Essentials of Italian Cooking<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>28 ounces whole peeled tomatoes from a can (San Marzano, if you can find them)<\/li>\n<li>5 tablespoons unsalted butter<\/li>\n<li>1 medium-sized yellow onion, peeled and halved<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<p>Put the tomatoes, onion and butter in a heavy saucepan (it fit just right in a 3-quart) over medium heat. Bring the sauce to a simmer then lower the heat to keep the sauce at a slow, steady simmer for about 45 minutes, or until droplets of fat float free of the tomatoes. Stir occasionally, crushing the tomatoes against the side of the pot with a wooden spoon.
