I&#8217;ve decided it&#8217;s time to focus on trying out the recipes I&#8217;ve already got.\u00c2\u00a0 That&#8217;s tough to do with all of these super-delicious sounding recipes popping up daily in my Google Reader.\u00c2\u00a0 In fact, last week I scrapped a dinner I&#8217;d already planned just so I cook <a href=\"http:\/\/cassiecraves.blogspot.com\/\">Cassie&#8217;s<\/a> fabulous sounding Jalapeno Popper Stuffed Chicken.\u00c2\u00a0 Honestly?\u00c2\u00a0 It was probably the best meal I&#8217;ve cooked all month, folks.\u00c2\u00a0 No lie.\u00c2\u00a0 It was super!\u00c2\u00a0 Cassie was genius enough to add bacon to the filling.\u00c2\u00a0 You can&#8217;t really go wrong with adding bacon to anything, right?\u00c2\u00a0 I served the chicken with green beans <em>cooked with bacon grease<\/em>, and they were delicious as well.\u00c2\u00a0 My filling ran out a little, but it still tasted fabulous.\u00c2\u00a0 And as a bonus, I got to use the first jalapenos from my garden!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-210\" title=\"jalapeno-popper-stuffed-chicken\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/06\/jalapeno-popper-stuffed-chicken.jpg\" alt=\"jalapeno-popper-stuffed-chicken\" width=\"455\" height=\"222\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/06\/jalapeno-popper-stuffed-chicken.jpg 455w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/06\/jalapeno-popper-stuffed-chicken-300x146.jpg 300w\" sizes=\"auto, (max-width: 455px) 100vw, 455px\" \/><\/p>\n<h4>Jalapeno Popper Stuffed Chicken<\/h4>\n<p>Source:<a href=\"http:\/\/cassiecraves.blogspot.com\/2009\/05\/jalapeno-popper-stuffed-chicken.html\"> Cassie Craves<\/a>, adapted from Allrecipes<br \/>\nIngredients:<\/p>\n<ul>\n<li>1 8-ounce package cream cheese, softened<\/li>\n<li>1\/2 cup shredded cheddar cheese<\/li>\n<li>2 jalapeno peppers, seeded and minced<\/li>\n<li>4 strips of bacon, diced<\/li>\n<li>4 (6 ounce) skinless, boneless chicken breast halves<\/li>\n<li>1 cup seasoned bread crumbs<\/li>\n<li>1\/4 cup vegetable oil<\/li>\n<\/ul>\n<p>Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels. Stir together the cream cheese, cheddar cheese, bacon, and jalapenos in a small bowl. Cut a pocket horizontally through the thickest side of each chicken breast, and fill with 1\/4 of the cheese mixture. Secure with toothpicks. Roll the chicken breasts in bread crumbs to coat. Heat the oil in a skillet over medium-high heat, and cook chicken breasts until no longer pink in the center and the juices run clear, about 8 minutes per side.
