{"id":1853,"date":"2010-01-13T21:10:38","date_gmt":"2010-01-14T03:10:38","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=1853"},"modified":"2010-01-13T21:10:38","modified_gmt":"2010-01-14T03:10:38","slug":"chicken-soft-taco-filling","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2010\/01\/13\/chicken-soft-taco-filling\/","title":{"rendered":"Chicken Soft Taco Filling"},"content":{"rendered":"<p>In the past when I&#8217;ve made chicken soft tacos (which was seldom), I used a store-bought package of taco seasoning.\u00c2\u00a0 Last week, as part of the <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/01\/11\/menu-plan-monday-and-eat-from-the-pantry-challenge\/\">Eat From the Pantry\/Freezer Challenge<\/a>, I made do with what I had on hand.\u00c2\u00a0 These were the most flavorful chicken tacos I&#8217;ve ever made, especially with <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/01\/06\/homemade-tortillas\/\">homemade tortillas<\/a>!<\/p>\n<p>Chicken Soft Taco Filling<\/p>\n<p>recipe by Cara<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 teaspoon oil<\/li>\n<li>1\/2 onion, chopped<\/li>\n<li>1 teaspoon minced garlic<\/li>\n<li>2 cups cooked chicken, chopped or shredded (I used leftover <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/21\/perfect-roast-chicken\/\">Perfect Roast Chicken<\/a>)<\/li>\n<li>1\/2 can\u00c2\u00a0 Rotel<\/li>\n<li>1 teaspoon cumin<\/li>\n<\/ul>\n<p>Heat oil in a large skillet over medium heat.\u00c2\u00a0 Cook onion until soft.\u00c2\u00a0 Add garlic, cook for 30 seconds.\u00c2\u00a0 Add chicken and cook for 5 minutes.\u00c2\u00a0 Add Rotel and cumin, cook for 20 minutes, stirring occasionally.\u00c2\u00a0 Serve with <a href=\"https:\/\/www.thepickyapple.com\/blog\/2010\/01\/06\/homemade-tortillas\/\">homemade tortillas<\/a>.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2010\/01\/13\/chicken-soft-taco-filling\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>In the past when I&#8217;ve made chicken soft tacos (which was seldom), I used a store-bought package of taco seasoning.\u00c2\u00a0 Last week, as part of the Eat From the Pantry\/Freezer Challenge, I made do with what I had on hand.\u00c2\u00a0 These were the most flavorful chicken tacos I&#8217;ve ever made, especially with homemade tortillas!
