{"id":177,"date":"2008-12-19T11:39:52","date_gmt":"2008-12-19T17:39:52","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=177"},"modified":"2009-10-08T06:29:47","modified_gmt":"2009-10-08T12:29:47","slug":"peppermint-pinwheel-cookies","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/12\/19\/peppermint-pinwheel-cookies\/","title":{"rendered":"Peppermint Pinwheel Cookies"},"content":{"rendered":"<p>I was drawn to this recipe because of the peppermint flavor and the cute red and white spiral cookies.\u00c2\u00a0 Getting those spirals to look as cute as they did in the magazine photo (below) was definitely a little tricky.\u00c2\u00a0 Mine didn&#8217;t turn out quite as cute as these, but they were tasty!\u00c2\u00a0 I think these taste best when chilled in the refrigerator for about 30 minutes.<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/peppermint-pinwheel-cookies.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-185\" title=\"peppermint-pinwheel-cookies\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/peppermint-pinwheel-cookies.jpg\" alt=\"\" width=\"500\" height=\"640\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/peppermint-pinwheel-cookies.jpg 882w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/peppermint-pinwheel-cookies-234x300.jpg 234w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<h4>Peppermint Pinwheel Cookies<\/h4>\n<p>from Southern Living, December 2008<\/p>\n<p>Makes 4 dozen<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/2 cup butter, softened<\/li>\n<li>1 cup sugar<\/li>\n<li>1 large egg<\/li>\n<li>1\/2 tsp vanilla extract<\/li>\n<li>1 3\/4 cups all-purpose flour<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>3\/4 tsp red food coloring paste<\/li>\n<li>Peppermint Frosting (recipe below)<\/li>\n<\/ul>\n<p>Beat butter at medium speed with a heavy-duty electric stand mixer until creamy; gradually add sugar, beating until light and fluffy.\u00c2\u00a0 Add egg and vanilla, beating until blended, scraping bowl as needed.<\/p>\n<p>Combine flour, baking soda, and salt; gradually add flour mixture to butter mixture, beating at low speed until blended.<\/p>\n<p>Divide dough into 2 equal portions.\u00c2\u00a0 Roll 1 portion of dough into a 12 x 8 inch rectangle on a piece of lightly floured plastic wrap.<\/p>\n<p>Knead food coloring paste into remaining portion of dough while wearing rubber gloves.\u00c2\u00a0 Roll tinted dough into a 12 x 8 inch rectangle in a piece of lightly floured plastic wrap.\u00c2\u00a0 Invert untinted dough onto tinted dough; peel off plastic wrap.\u00c2\u00a0 Cut dough in half lengthwise, forming 2 (12 x 4 inch) rectangles.\u00c2\u00a0 Roll up each rectangle jelly-roll fashion, starting at 1 long side, using bottom piece of plastic wrap as a guide.\u00c2\u00a0 Wrap in plastic wrap, and freeze 4 hours or up to 1 month.<\/p>\n<p>Preheat oven to 350 degrees F.\u00c2\u00a0 Cut ends off each dough log, and discard.\u00c2\u00a0 Cut dough into 1\/4 inch thick pieces, and place on parchment paper lined baking sheets.<\/p>\n<p>Bake at 350 degrees F for 6 to 7 minutes or until puffed and set; cool cookies on baking sheets 5 minutes.\u00c2\u00a0 Remove to wire racks and cool completely (about 30 minutes).<\/p>\n<p>Place Peppermint Frosting in a heavy duty zip-top plastic freezer bag.\u00c2\u00a0 Snip corner of bag to make a small hole.\u00c2\u00a0 Pipe about 2 tsp. frosting onto half of cookies;
