{"id":175,"date":"2008-12-19T11:40:18","date_gmt":"2008-12-19T17:40:18","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=175"},"modified":"2009-10-08T06:29:35","modified_gmt":"2009-10-08T12:29:35","slug":"world-peace-cookies","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/12\/19\/world-peace-cookies\/","title":{"rendered":"World Peace Cookies"},"content":{"rendered":"<p>Buttery, chocolate-y, salty cookies.\u00c2\u00a0 Called World Peace Cookies because a daily dose of these cookies &#8220;is all that is needed to ensure planetary peace and happiness.&#8221;\u00c2\u00a0 Amen to that.\u00c2\u00a0 I love the idea of keeping several logs of this dough in the freezer to slice and bake <em>as needed. <\/em>I think it could be argued that I <em>need <\/em>to eat them every single day&#8230;.chasing around a super active 16 month old is lots of work!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/world-peace-cookies.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-181\" title=\"world-peace-cookies\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/world-peace-cookies.jpg\" alt=\"\" width=\"455\" height=\"254\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/world-peace-cookies.jpg 455w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/12\/world-peace-cookies-300x167.jpg 300w\" sizes=\"auto, (max-width: 455px) 100vw, 455px\" \/><\/a><\/p>\n<h4>World Peace Cookies<\/h4>\n<p>from <a href=\"http:\/\/www.amazon.com\/Baking-Home-Yours-Dorie-Greenspan\/dp\/0618443363\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1229396283&amp;sr=8-1\">Baking, From My Home to Yours<\/a>, by Dorie Greenspan<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 1\/4 cups all-purpose flour<\/li>\n<li>1\/3 cup unsweetened cocoa powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1 stick plus 3 tbsp unsalted butter, at room temperature<\/li>\n<li>2\/3 cup (packed) brown sugar<\/li>\n<li>1\/4 cup sugar<\/li>\n<li>1\/2 tsp fleur de sel or 1\/4 tsp fine sea salt<\/li>\n<li>1 tsp pure vanilla extract<\/li>\n<li>5 ounces bittersweet chocolate, chopped into chips, or a generous 3\/4 cup store-bought mini chocolate chips<\/li>\n<\/ul>\n<p>Sift the flour, cocoa and baking soda together.\u00c2\u00a0 Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter on medium speed until soft and creamy.\u00c2\u00a0 Add both sugars, the salt and vanilla extract and beat for 2 minutes more.<\/p>\n<p>Turn off the mixer.\u00c2\u00a0 Pour in the dry ingredients, drape a kitchen towel over the stand mixer to protect yourself and your kitchen from flying flour and pulse the mixer at low speed about 5 times, a second or two each time.\u00c2\u00a0 Take a peek-if there is still a lot of flour on the surface of the dough, pulse a couple of times more; if not, remove the towel.\u00c2\u00a0 Continuing at low speed, mix for about 30 seconds more, just until the flour disappears into the dough-for the best texture, work the dough as little as possible once the flour is added, and don&#8217;t be concerned if the dough looks a little crumbly.\u00c2\u00a0 Toss in the chocolate pieces and mix only to incorporate.<\/p>\n<p>Turn the dough out onto a work surface, gather it together and divide it in half.\u00c2\u00a0 Working with one half at a time, shape the dough into logs that are 1 1\/2 inches in diameter.\u00c2\u00a0 Wrap the logs in plastic wrap and refrigerate them for at least 3 hours.\u00c2\u00a0 (The dough can be refrigerated for up to 3 days or frozen for up to 2 months.\u00c2\u00a0 If you&#8217;ve frozen the dough, you needn&#8217;t defrost it before baking-just slice the logs into cookies and bake the cookies 1 minute longer.)<\/p>\n<p>Center rack in the oven and preheat to 325 degrees F.\u00c2\u00a0 Line two baking sheets with parchment or silicone mats.\u00c2\u00a0 Using a sharp thin knife, slice the logs into rounds that are 1\/2 inch thick.\u00c2\u00a0 (The rounds are likely to crack as you&#8217;re cutting them-don&#8217;t be concerned, just squeeze the bits back onto each cookie.)\u00c2\u00a0 Arrange the rounds on the baking sheets, leaving about 1 inch between them.<\/p>\n<p>Bake the cookies one sheet at a time for 12 minutes-they won&#8217;t look done, nor will they be firm, but that&#8217;s just the way they should be.\u00c2\u00a0 Transfer the baking sheet to a cooling rack and let the cookies rest until they are only just warm, at which point you can serve them or let them reach room temperature.<\/p>\n<p>Makes about 36 cookies.<\/p>\n<div class=\"linkwithin_hook\" id=\"https:\/\/www.thepickyapple.com\/blog\/2008\/12\/19\/world-peace-cookies\/\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Buttery, chocolate-y, salty cookies.\u00c2\u00a0 Called World Peace Cookies because a daily dose of these cookies &#8220;is all that is needed to ensure planetary peace and happiness.&#8221;\u00c2\u00a0 Amen to that.\u00c2\u00a0 I love the idea of keeping several logs of this dough in the freezer to slice and bake as needed.
