Roast Turkey"},"content":{"rendered":"<p>Last weekend we invited both sets of grandparents over for a post-Christmas dinner.\u00c2\u00a0 I served Perfect Roast Turkey, <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/26\/cheesy-scalloped-potatoes\/\">Cheesy Scalloped Potatoes<\/a>, <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/12\/31\/green-beans-with-prosciutto\/\">Green Beans with Prosciutto<\/a>, Parker House Rolls, and Cranberry Orange Relish (brought by my mom).\u00c2\u00a0 For dessert we enjoyed <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/11\/22\/pumpkin-crunch-cake\/\">Pumpkin Crunch Cake<\/a> and two kinds of pies (pies also provided by my mom).\u00c2\u00a0 It was one of the best meals I&#8217;ve prepared in a long time, if I do say so myself.\u00c2\u00a0 Whenever I cook a big meal like this, there is normally one thing or another that goes wrong.\u00c2\u00a0 But this meal just seemed to come together perfectly, which was surprising given that I made up two of the recipes (the turkey and the green beans) as I went along.<\/p>\n<p>I&#8217;m calling the turkey Perfect Roast Turkey to mimic the title of my <a href=\"https:\/\/www.thepickyapple.com\/blog\/2009\/09\/21\/perfect-roast-chicken\/\">Perfect Roast Chicken<\/a>.\u00c2\u00a0 And because, well, it turned out <em>perfectly <\/em>juicy and flavorful.\u00c2\u00a0 Not that I&#8217;m bragging or anything.<\/p>\n<p><img loading=\"lazy\" Turkey<\/h4>\n<p>recipe by Cara<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>a roasting turkey (mine was a 15 pounder)<\/li>\n<li>1 stick of butter, room temperature<\/li>\n<li>1 onion, quartered (you can also used chopped onions.\u00c2\u00a0 I buy pre-chopped onions from the freezer section so I NEVER have to chop onions!)<\/li>\n<li>1 carrot, or a handful of baby carrots<\/li>\n<li>1 apple, cored and cut into several pieces<\/li>\n<li>2 teaspoons dried thyme<\/li>\n<li>kosher salt<\/li>\n<li>pepper<\/li>\n<li>3\/4 cup white wine, divided (I used Pinot Grigio that I had on hand)<\/li>\n<li>1\/2 cup water<\/li>\n<\/ul>\n<p>Remove neck and giblets from the turkey, and rinse the cavity.\u00c2\u00a0 Pat turkey dry with paper towels.\u00c2\u00a0 Sprinkle salt liberally in the cavity.\u00c2\u00a0 Rub the entire stick of butter over the outside of the turkey AND under the skin.\u00c2\u00a0 Pour 1\/4 cup of wine into the cavity, then stuff the cavity with the onion, carrot, apple, and thyme.\u00c2\u00a0 Use your hand to stir it around a little.\u00c2\u00a0 Sprinkle the outside of the turkey with salt and pepper.\u00c2\u00a0 Add the remaining 1\/2 cup of white wine and 1\/2 cup of water to the bottom of the roasting pan.\u00c2\u00a0 Cook turkey at 325 degrees F for the time directed on the turkey package, based on its weight (my 15 pound bird cooked for 4 hours at 325).\u00c2\u00a0 If your turkey starts to get too brown, just put a loose tent of foil over it and continue cooking.\u00c2\u00a0 Allow to cool for at least 20 minutes before slicing.<\/p>\n<p>Save
