{"id":165,"date":"2008-11-28T12:52:04","date_gmt":"2008-11-28T18:52:04","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=165"},"modified":"2009-10-08T06:30:36","modified_gmt":"2009-10-08T12:30:36","slug":"all-in-one-holiday-bundt-cake","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/11\/28\/all-in-one-holiday-bundt-cake\/","title":{"rendered":"All-in-One Holiday Bundt Cake"},"content":{"rendered":"<p>For this year&#8217;s Thanksgiving dinner(s), I made 2 desserts.\u00c2\u00a0 I couldn&#8217;t make up my mind which dessert to bring to which dinner, so I brought half of each dessert to both dinners.\u00c2\u00a0 I wasn&#8217;t the only person bringing desserts, so I didn&#8217;t worry too much about the smaller quantities.<\/p>\n<p>I decided this year to make two pumpkin desserts.\u00c2\u00a0 I&#8217;ve had my eye on Dorie Greenspan&#8217;s recipe for All-in-One Holiday Bundt Cake for a while now.\u00c2\u00a0 This recipe is featured in <a href=\"http:\/\/www.amazon.com\/Baking-Home-Yours-Dorie-Greenspan\/dp\/0618443363\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1227892567&amp;sr=8-1\">Baking from My Home to Yours<\/a> and a variation was featured in a recent issue of <a href=\"http:\/\/www.bonappetit.com\/\">Bon Appetit<\/a>.\u00c2\u00a0 It&#8217;s a great basic bundt cake recipe with lots of &#8220;add ins&#8221; (cranberries, chopped apples, nuts).\u00c2\u00a0 The Picky Apple didn&#8217;t much care for the add ins, but I thought they completed the cake.\u00c2\u00a0 I topped the cake with a basic glaze of powdered sugar, milk, and vanilla.\u00c2\u00a0 This cake wasn&#8217;t exactly the star of the dessert table (you&#8217;ll see one reason when I post the <em>other<\/em> dessert I brought), but it played a strong supporting role.\u00c2\u00a0 I think this cake would be great for a holiday brunch!<\/p>\n<p><a href=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/11\/holiday-bundt-cake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-166\" title=\"holiday-bundt-cake\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/11\/holiday-bundt-cake.jpg\" alt=\"\" width=\"455\" height=\"304\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/11\/holiday-bundt-cake.jpg 455w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2008\/11\/holiday-bundt-cake-300x200.jpg 300w\" sizes=\"auto, (max-width: 455px) 100vw, 455px\" \/><\/a><\/p>\n<h4>All-in-One Holiday Bundt Cake<\/h4>\n<p>from <a href=\"http:\/\/www.amazon.com\/Baking-Home-Yours-Dorie-Greenspan\/dp\/0618443363\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1227892567&amp;sr=8-1\">Baking From My Home To Yours<\/a>, by Dorie Greenspan<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 cups all-purpose flour<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>1\/4 tsp freshly grated nutmeg<\/li>\n<li>Pinch of salt<\/li>\n<li>1 1\/2 tsp grated fresh ginger (or 1 tsp ground ginger)<\/li>\n<li>1 1\/4 sticks (10 tbsp) unsalted butter, at room temperature<\/li>\n<li>1 cup sugar<\/li>\n<li>1\/2 cup (packed) light brown sugar<\/li>\n<li>2 large eggs, at room temperature<\/li>\n<li>1 tsp pure vanilla extract<\/li>\n<li>1 1\/4 cups canned unsweetened pumpkin puree<\/li>\n<li>1 large apple, peeled, cored and finely chopped<\/li>\n<li>1 cup cranberries, halved or coarsely chopped <em>(I used Craisins instead for extra sweetness)<\/em><\/li>\n<li>1 cup pecans, coarsely chopped<\/li>\n<li>Confectioners&#8217; sugar, for dusting<\/li>\n<\/ul>\n<p>Center a rack in the oven and preheat the oven to 350 degrees F.\u00c2\u00a0 Butter a 9- to 10- inch (12 cup) Bundt pan.\u00c2\u00a0 Don&#8217;t place the pan on a baking sheet-you want the oven&#8217;s heat to circulate freely through the Bundt&#8217;s inner tube.<\/p>\n<p>Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt and ground ginger, if you&#8217;re using it (not the grated ginger).<\/p>\n<p>Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter and both sugars together at medium speed until light and fluffy.\u00c2\u00a0 Add the eggs one at a time, and beat for 1 minute after each addition.\u00c2\u00a0 Beat in the vanilla.\u00c2\u00a0 Reduce the mixer speed to low and add the pumpkin, chopped apple and grated ginger, if you&#8217;re using it-don&#8217;t be concerned if the mixture looks curdled.\u00c2\u00a0 Still on low speed, add the dry ingredients, mixing only until they are incorporated.\u00c2\u00a0 With a rubber spatula, stir in the cranberries and pecans.\u00c2\u00a0 Scrape the batter into the pan and smooth the top with the rubber spatula.<\/p>\n<p>Bake for 60 to 70 minutes, or until a thin knife inserted into the center of the cake comes out clean.\u00c2\u00a0 Transfer the cake to a rack and cool for 10 minutes before unmolding, then cool to room temperature on the rack.<\/p>\n<p>Just before bringing the cake to the table, dust it with confectioners&#8217;
