{"id":164,"date":"2008-11-24T10:16:14","date_gmt":"2008-11-24T16:16:14","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=164"},"modified":"2009-10-08T06:30:55","modified_gmt":"2009-10-08T12:30:55","slug":"sweet-potato-pecan-pie-with-cinnamon-ice-cream","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2008\/11\/24\/sweet-potato-pecan-pie-with-cinnamon-ice-cream\/","title":{"rendered":"Sweet Potato Pecan Pie with Cinnamon Ice Cream"},"content":{"rendered":"<p>Since Thanksgiving is just a few days away, I thought I&#8217;d share some of my favorite Thanksgiving dishes from years past.\u00c2\u00a0 I haven&#8217;t hosted Thanksgiving at our house yet (though I&#8217;d love to do that someday), but I always bring dishes, usually desserts, along to Thanksgiving dinner at my parents&#8217; house and The Picky Apple&#8217;s parents&#8217; house.<\/p>\n<p>I baked this pie for Thanksgiving a few years ago, and everyone seemed to really enjoy it.\u00c2\u00a0 The recipe caught my eye because one of my favorite restaurants, <a href=\"http:\/\/www.pappadeaux.com\/\">Pappadeaux Seafood<\/a>, serves a Sweet Potato Pecan Pie.\u00c2\u00a0 (In fact, they are selling whole pies for Thanksgiving for $14.95 and $6.95 a slice&#8230;.perhaps I should get in on the holiday pie-selling business!?)\u00c2\u00a0 Definitely don&#8217;t leave out the cinnamon ice cream, even if you use store bought.\u00c2\u00a0 It completes the dessert!<\/p>\n<h4>Sweet Potato Pecan Pie with Cinnamon Ice Cream<\/h4>\n<p>from <em>Cottage Living Magazine, November 2005<\/em><\/p>\n<p>Ingredients: <em>(note: this ingredient list is a little confusing, so read through it carefully)<\/em><\/p>\n<ul>\n<li>1 (9-inch) pie shell <em>(if I have time, I&#8217;ll share my homemade pie crust recipe this week too!)<\/em><\/li>\n<li>1 cup sweet potatoes, mashed<\/li>\n<li>2 tbsp light brown sugar<\/li>\n<li>2 large egg yolks<\/li>\n<li>1 tbsp unsalted butter, softened<\/li>\n<li>1 tbsp whipping cream<\/li>\n<li>1 1\/2 tsp vanilla extract, divided<\/li>\n<li>1\/4 plus 1\/8 tsp ground cinnamon<\/li>\n<li>1\/4 tsp kosher salt<\/li>\n<li>1\/8 tsp ground nutmeg<\/li>\n<li>1 cup pecans, chopped<\/li>\n<li>1\/2 cup pecans, halved<\/li>\n<li>1\/4 cup granulated sugar<\/li>\n<li>2 large eggs<\/li>\n<li>3\/4 cup light corn syrup<\/li>\n<li>1 1\/2 tbsp unsalted butter, melted<\/li>\n<li>Cinnamon Ice Cream (recipe follows)<\/li>\n<\/ul>\n<p>Preheat oven to 400 degrees F.\u00c2\u00a0 Bake pie shell 6 to 8 minutes or until lightly browned; remove from oven.\u00c2\u00a0 Lower temperature to 350 degrees F.<\/p>\n<p>Combine sweet potato and next 4 ingredients in a large bowl.\u00c2\u00a0 Add 1\/2 tsp vanilla and next 3 ingredients; stir until smooth and completely combined.\u00c2\u00a0 Spread in an even layer in bottom of shell.\u00c2\u00a0 Add chopped pecans evenly over sweet potato mixture.\u00c2\u00a0 Lay pecan halves flat in a circle around perimeter.<\/p>\n<p>Combine granulated sugar and 2 large eggs in a separate bowl; whisk until well blended.\u00c2\u00a0 Whisk in corn syrup, melted butter, and remaining 1 tsp vanilla.\u00c2\u00a0 Pour mixture slowly over pecan layer.\u00c2\u00a0 Do not overfill.\u00c2\u00a0 (You may have excess.)<\/p>\n<p>Bake at 350 degrees F for 50 to 55 minutes or until pie is puffed, set, and golden brown.\u00c2\u00a0 Remove and let cool.\u00c2\u00a0 Serve with Cinnamon Ice Cream.<\/p>\n<h4>Cinnamon Ice Cream<\/h4>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 cups half and half<\/li>\n<li>1 1\/2 cups whipping cream<\/li>\n<li>6 large egg yolks<\/li>\n<li>3\/4 cup sugar<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>1\/2 tsp salt<\/li>\n<\/ul>\n<p>Combine half-and-half and whipping cream in a stainless steel saucepan.\u00c2\u00a0 Cook over medium heat just until mixture begins to boil.<\/p>\n<p>Whisk together yolks and next 3 ingredients in a large bowl.\u00c2\u00a0 Gradually whisk hot cream mixture into yolk mixture and pour back into saucepan.<\/p>\n<p>Cook over low heat (do not boil), stirring constantly, until custard begins to thicken and coats back of a spoon.\u00c2\u00a0 Strain into a metal bowl;
