Beef Chili"},"content":{"rendered":"<p>So far this fall, I&#8217;ve tried about 4 different chili recipes, including a Cajun-style sweet hot chili and a chili con carne using beer.\u00c2\u00a0 All were decent, but none left me wanting another bowl.\u00c2\u00a0 Then I tried this recipe from <a href=\"http:\/\/www.amazon.com\/Americas-Kitchen-Cookbook-Heavy-Duty-Revised\/dp\/193361501X\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1227064995&amp;sr=8-1\">The America&#8217;s Test Kitchen Family Cookbook<\/a>.\u00c2\u00a0 THIS recipe I could eat day after day, meal after meal.\u00c2\u00a0 In fact, I <em>did. <\/em>I had chili for dinner one night, then lunch and dinner the following day, then lunch the day after that.\u00c2\u00a0 The only other dish I could eat day after day like this is my <a href=\"https:\/\/www.thepickyapple.com\/blog\/2008\/03\/11\/smoked-sausage-butternut-squash-and-wild-rice-soup\/\">Smoked Sausage, Butternut Squash and Wild Rice Soup<\/a>.\u00c2\u00a0 This chili recipe makes lots of chili, but even if you&#8217;re not cooking for a crowd, make the full batch and freeze some.\u00c2\u00a0 It will be good in the freezer for a couple of months.<\/p>\n<p><a Chili<\/h4>\n<p>from <a href=\"http:\/\/www.amazon.com\/Americas-Kitchen-Cookbook-Heavy-Duty-Revised\/dp\/193361501X\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1227064995&amp;sr=8-1\">The America&#8217;s Test Kitchen Family Cookbook<\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 tbsp vegetable oil<\/li>\n<li>2 onions, chopped (I used about 1 onion)<\/li>\n<li>1 red bell pepper, stemmed, seeded and chopped<\/li>\n<li>1\/4 cup chili powder<\/li>\n<li>1 tbsp cumin<\/li>\n<li>1\/2 tsp cayenne pepper<\/li>\n<li>Salt<\/li>\n<li>6 garlic cloves, minced<\/li>\n<li>2 pounds (85 percent lean) ground beef<\/li>\n<li>2 (15.5 ounce) cans dark red kidney beans, rinsed<\/li>\n<li>1 (28 ounce) can diced tomatoes<\/li>\n<li>1 (28 ounce) can tomato puree<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>Heat the oil in a large Dutch oven over medium heat until shimmering.\u00c2\u00a0 Add the onions, bell pepper, chili powder, cumin, cayenne, and 1\/2 teaspoon salt.\u00c2\u00a0 Cook until the vegetables have softened, about 7 minutes.\u00c2\u00a0 Stir in the garlic and cook for 15 seconds.<\/p>\n<p>Add the beef and increase the heat the medium-high.\u00c2\u00a0 Cook, breaking up the beef with a spoon, until no longer pink, about 10 minutes.\u00c2\u00a0 Stir in the beans, diced tomatoes with their juice, tomato puree, and 1\/2 teaspoon salt.\u00c2\u00a0 Bring to a simmer, cover, and cook for 45 minutes.<\/p>\n<p>Remove the lid and continue to simmer until the beef is tender, about 45 minutes.\u00c2\u00a0 Season with salt and pepper to taste before serving.<\/p>\n<div
