{"id":1461,"date":"2009-12-10T20:10:27","date_gmt":"2009-12-11T02:10:27","guid":{"rendered":"https:\/\/www.thepickyapple.com\/blog\/?p=1461"},"modified":"2009-12-10T20:10:27","modified_gmt":"2009-12-11T02:10:27","slug":"cheesy-rice-fritters","status":"publish","type":"post","link":"https:\/\/www.thepickyapple.com\/blog\/2009\/12\/10\/cheesy-rice-fritters\/","title":{"rendered":"Cheesy Rice Fritters"},"content":{"rendered":"<p>I tried this new recipe early last week, and it was a surprising hit with The Picky Apple.\u00c2\u00a0 I wasn&#8217;t entirely sure how well a dish without meat as a main component would go over with him, but in an effort to reduce our grocery bill, I was attempting to cook less meat.\u00c2\u00a0 Note that this dish is not meatless&#8230;the bacon adds some important flavor to these rice fritters.\u00c2\u00a0 I will note that the spinach component of the recipe was a big flop, but that may have just been my fault&#8230;the spinach wound up extra greasy and full of breadcrumbs.\u00c2\u00a0 The cheesy rice fritters were great though!\u00c2\u00a0 Crispy on the outside and cheesy in the middle!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1464\" title=\"Cheesy Rice Fritters\" src=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/12\/Cheesy-Rice-Fritters.jpg\" alt=\"Cheesy Rice Fritters\" width=\"557\" height=\"371\" srcset=\"https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/12\/Cheesy-Rice-Fritters.jpg 557w, https:\/\/www.thepickyapple.com\/blog\/wp-content\/uploads\/2009\/12\/Cheesy-Rice-Fritters-300x199.jpg 300w\" sizes=\"auto, (max-width: 557px) 100vw, 557px\" \/><\/p>\n<h4>Cheesy Rice Fritters<\/h4>\n<p>from Every Day with Rachael Ray<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 cup arborio rice<\/li>\n<li>3 slices bacon, chopped<\/li>\n<li>1 cup shredded mozzarella cheese<\/li>\n<li>1 cup grated parmesan cheese<\/li>\n<li>1 large egg, lightly beaten<\/li>\n<li>Salt and pepper<\/li>\n<li>1\/2 cup seasoned breadcrumbs<\/li>\n<li>1\/4 cup extra-virgin olive oil<\/li>\n<li>One 10 ounce bag spinach, coarsely chopped<\/li>\n<li>1 pinch crushed red pepper<\/li>\n<\/ul>\n<p>Line a baking sheet with parchment paper.\u00c2\u00a0 In a medium saucepan, bring the rice and 2 1\/2 cups water to a boil.\u00c2\u00a0 Lower the heat and simmer until the rice is still firm but cooked through and the water has evaporated, about 20 minutes.\u00c2\u00a0 Transfer to a large bowl and let cool slightly.<\/p>\n<p>Meanwhile, in a large skillet, cook the bacon until crisp.\u00c2\u00a0 Using a slotted spoon, add the bacon to the rice, reserving the skillet with the bacon fat.\u00c2\u00a0 Stir the mozzarella, parmesan and egg into the rice mixture; season with salt and pepper.<\/p>\n<p>Divide the rice mixture into 12 mounds on the prepared baking sheet.\u00c2\u00a0 Flatten into 3-inch patties.\u00c2\u00a0 Sprinkle on both sides with the breadcrumbs.<\/p>\n<p>Add the olive oil to the skillet and heat over medium-high heat.\u00c2\u00a0 Working in batches, add the patties and cook, turning once, until crisp, about 5 minutes.\u00c2\u00a0 Drain on paper towels.\u00c2\u00a0 Add the spinach to the skillet and cook over high heat, turning until wilted, about 2 minutes;
